Lemon Meringue Tea Cakes

- 1/2 teaspoon cream of tartar

Turkey Lasagna

- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 4 cloves garlic, minced
- 1 pound fresh ground turkey
- 1 (28-ounce) can plum tomatoes, crushed
- 1 (6-ounce) can tomato paste
- Coarse salt and freshly ground pepper
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 tablespoon chopped fresh basil
- 1 (9-ounce) package no-boil lasagna noodles
- 15 ounces low-fat ricotta or low-fat cottage cheese
- 3/4 cup freshly grated Parmesan cheese
- 1 large egg, beaten
- 2 pounds fresh spinach, washed, but not dried
- 1 pound low-fat shredded mozzarella cheese

Orange Yogurt Cake

- 1 large navel orange, cut into 8 wedges
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1/8 teaspoon baking soda
- Pinch of coarse salt
- 1/2 cup plain whole milk yogurt
- 1 teaspoon grated orange zest
- 1 large egg
- 3 tablespoons honey
- 1/2 teaspoon pure vanilla extract
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup confectioners' sugar
Healthy Zucchini Muffins

- 2/3 Cup all-purpose flour
- 1/2 Cup sugar
- 1 TB. (Desiree likes it heaping) PENZEYS CINNAMON
- 1/4 tsp. GROUND ALLSPICE
- 1/4 tsp. GROUND CLOVES
- 11/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. SALT (Desiree uses KOSHER-STYLE FLAKE SALT)
- 11/3 Cups shredded zucchini (1 medium), peeled if desired
- 1/2 Cup milk
- 2 TB. oil (Desiree uses grapeseed oil)
- 2 TB. honey (Desiree uses local honey)
- 1 large egg
Portuguese Fish Supper

- 1 * 1 tablespoon extra-virgin olive oil
- 1/3 * 1/3 pound Spanish style chorizo, casing removed and diced or crumbled
- 1 * 1 medium onion, chopped
- 2 * 2 large cloves garlic, chopped
- 1 * 1 small bundle black or dinosaur kale, thinly sliced
- * A few grates nutmeg
- * Salt and freshly ground black pepper
- 1 * 1 cup chicken stock
- 1 * 1 (8-ounce) can tomato sauce
- 1 * 1 (15-ounce) can diced tomatoes or fire roasted diced tomatoes
- 1 * 1 (15-ounce) can garbanzo beans, rinsed and drained
- * A couple sprigs fresh thyme, leaves chopped
- 4 * 4 (6 to 8-ounce) thick pieces cod or haddock fillets
- * Seafood seasoning or sweet paprika (recommended: Old Bay)
- * Chopped flat-leaf parsley, for garnish
- * Crusty bread or rolls or Portuguese rolls, for mopping

- 1 2/3 cups granulated sugar
- 1 cup vegetable oil
- 15 -ounce can pumpkin
- 2 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- Icing:
- 8 -ounce package cream cheese, softened
- 1/2 cup butter or margarine, softened
- 2 cups sifted confectioners' sugar
- 1 teaspoon vanilla extract
