Hummingbird Cake

- Ingredients:
- 3 cups all-purpose flour
- 2 cups white sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 eggs- lightly beaten
- 2 teaspoons vanilla extract
- 1 1/2 cups oil
- 1 (8 ounce can) crushed pineapple -do not drain
- 2 cups bananas, mashed or about 3 – 4 large bananas
- 1 cups pecans or almonds/ walnuts chopped
- Pecan Cream Cheese Frosting:
- 1/4 cup unsalted butter, room temperature
- 8 ounces cream cheese, room temperature
- 1 pound box (about 3 2/3 cups) confectioners (powdered or icing) sugar, sifted
- 1 teaspoon pure vanilla extract
- 1/2 cup finely chopped pecans
Clam Casino Dip

Turkey Pot PIe

- 11/2 cups turkey or chicken cut into small chunks (I tend to use turkey because it is a wonderful dish to make with leftover Thanksgiving turkey)
- 11/2 cups boiled potatoes cut into chunks (can use whole canned potatoes cut into quarters too)
- 1 bag frozen vegetables (peas, green beans, carrots, corn, etc. – I think that is the best kind of medley)
- 1 to 2 cans of mushrooms
- 1 to 2 large (3 to 4 small) cans cream of mushroom soup
- Gravy from turkey (if available)
- Milk (as needed)
- 1/4 to 1/2 stick butter/margarine
- garlic powder, basil, oregano, parsley, salt, pepper
Spinach articoke dip

Pizzelle Cookies

- 6 Eggs
- 1 1/2 Cup Sugar
- 3 1/2 Cup Flour (sifted)
- 1/2 Tsp Salt
- 4 Tsp. Baking Powder
- 1 Cup melted butter
- 2 TBSP Anise or Vanilla Flavoring
- Mix butter, eggs, and sugar. Add anise or vanilla flavoring. Sift in Flour, Baking Powder, and Salt and continue mixing. Use with Pizzelle Iron.
- On my machine, which has two cookies per press, this makes approx 4 dozen.
Cauliflower breadsticks
