Atlanta Brisket is a braised, southern dish featuring boxed onion soup mix, ketchup, and Atlanta’s own Coca-Cola
- Parchment paper provides a nonreactive barrier between the cola-based braising liquid and the aluminum foil.
- INGREDIENTS
- 1 (3 1/2-pound) beef brisket, flat cut, fat trimmed to 1/4 inch
- Salt and pepper
- 4 teaspoons vegetable oil
- 1 pound onions, halved and sliced 1/2 inch thick
- 2 cups cola
- 1 1/2 cups ketchup
- 4 teaspoons onion powder
- 2 teaspoons packed dark brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme

- 1 1/2 cups heavy cream
- 1 cup flaked, sweetened toasted coconut

- 1/2 cup water
- 1/4 cup turmeric
- stir over a gentle heat for 7-10 minutes to make a paste
- 2 cups coconut milk
- 1/2 teaspoon cinnamon
- 1 teaspoon coconut oil
- 1 teaspoon turmeric paste
- 1 teaspoon chopped ginger
- 4-6 black peppercorns
- 1 pinch stevia
- Simmer for 10 minutes
- Strain mixture to get rid of ginger and peppercorns
- Makes 2 cups
- Sprinkle cinnamon on the top

- 1 1/2 recipes Pate Brisee, divide dough into 3 disks
- All-purpose flour, for dusting
- 7 large eggs
- 1 tablespoon heavy cream
- 1 1/2 cups plus 2 tablespoons packed light-brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground ginger
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon ground nutmeg
- 3 cups evaporated milk

Meatloaf Meatballs with Horseradish Mash and Gravy

Soak bread in milk while veggies cool
- For the Meatballs:
- INGREDIENTS
- 3 tablespoons butter
- 1 onion, finely chopped
- 2 small ribs celery, finely chopped
- 3 cloves garlic, finely chopped
- Salt and pepper
- 2 tablespoons thyme, finely chopped
- 1/4 cup dry sherry or white wine
- 3 slices 1-inch thick good quality white bread, crusts trimmed
- 1 About 1 cup whole milk
- 2 pounds ground sirloin
- 1/4 cup chopped flat-leaf parsley
- 1/4 cup Worcestershire sauce
- 2 tablespoons Dijon mustard
- 1 large egg plus 1 yolk, lightly beaten
- Olive oil cooking spray
- For the Horseradish Mash:
- 2 1/2 to 3 pounds Russet potatoes, peeled and chunked
- Salt
- 1 cup sour cream
- 1/4 to 1/2 cup half-n-half or heavy cream
- Coarse black pepper
- 3 to 4 tablespoons horseradish, to your taste
- 1/4 to 1/3 cup chopped chives
- For the Gravy:
- 4 tablespoons butter
- 3 tablespoons flour
- 3 cups beef stock
- 3 tablespoons Worcestershire sauce
- Coarse black pepper
- 1 egg yolk, lightly beaten
Ginger Snaps

- 3/4 cups butter
- 1 cup brown sugar
- 1/4 cup molasses
- 1 egg
- Cream until fluffy
- Sift together
- 2 1/4 cups flour
- 2 teaspoons soda
- 1/2 tsp salt
- 2 tsp or more ground ginger
- 1 tsp cinnamon
- 1/2 tsp cloves
- Stir into molasses mixture.
