Garlic-Herb Roasted Chicken Recipe

Your mouth will be watering as the aromas of this roasting chicken fill your home
- 1 (4 to 5 pound) roasting chicken
- 2 teaspoons each fresh parsley, rosemary, sage and thyme, minced
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 20 garlic cloves, peeled and sliced
- 1 medium lemon, halved
- 1 large whole garlic bulb
- 1 sprig each fresh parsley, rosemary, sage and thyme
Orange Cream Puffs

Arrange oven racks to divide oven into thirds
- Puffs:
- 1 C flour
- 3/4 tsp. baking powder
- pinch of salt
- 1 stick + 1 T butter
- 3/4 C water
- 5 large eggs
- Filling:
- 3 1/2 C heavy whipping cream
- 1/2 C confectioners' sugar
- 1/4 C finely grated orange zest (3 oranges)
- 1/4 C orange liqueur

- 2 cups crushed Kit Kat, Twix, or Heath candy bars
- 6 small apples
- 1 (14 ounce) bag soft caramel candies

- 1/2 pound (2 sticks) unsalted butter, at room temperature
- 2 1/2 cups granulated sugar, divided
- 4 extra-large eggs, at room temperature
- 1/3 cup grated orange zest (6 oranges)
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 3/4 cup freshly squeezed orange juice, divided
- 3/4 cup buttermilk, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup confectioners' sugar, sifted
- 1 1/2 tablespoons freshly squeezed orange juice
Warm Farro and Cranberry Bean Salad

Directions Bring a saucepan of well salted water to a boil
- Kosher salt
- 2 cups shelled fresh cranberry beans
- 2 cups farro
- 4 slices bacon, cut crosswise into 1/2-inch lengths
- Extra-virgin olive oil
- 1 red onion, cut into 1/4-inch dice
- Pinch crushed red pepper
- 2 cloves garlic, smashed and finely chopped
- 1 cup chicken stock
- 1 head radicchio Trevisano, cut crosswise into 1/2-inch lengths
- 1 bunch fresh chives, finely chopped
Cape Cod Chopped Salad

Directions Preheat the oven to 400 degrees F
- 8 ounces thick-cut bacon, such as Niman Ranch
- 8 ounces baby arugula
- 1 large Granny Smith apple, peeled and diced
- 1/2 cup toasted walnut halves, coarsely chopped (see note)
- 1/2 cup dried cranberries
- 6 ounces blue cheese, such as Roquefort, crumbled
- 3 tablespoons good apple cider vinegar
- 1 teaspoon grated orange zest
- 2 tablespoons freshly squeezed orange juice
- 2 1/2 teaspoons Dijon mustard
- 2 tablespoons pure maple syrup
- Kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2/3 cup good olive oil
Grilled Bananas

Preheat a grill. In a bowl, blend rum, honey, and cinnamon
- 2 T dark rum
- 2 T honey
- 1 tsp. cinnamon
- 4 bananas, peel on, sliced lengthwise
- 1 pint ice cream of your choice, or frozen yogurt
Braised Beef Brisket

Rub the brisket generously with spice blend, cover with plastic wrap and let marinate overnight in refrigerator
- 1 (6-pound) beef brisket, trimmed of fat
- 1/2 cup BBQ spice blend, be sure and check sodium levels
- 4 cups water (1 cup cold, 3 cups hot)
- 1 tablespoon very finely ground coffee
- 1/4 cup dark brown sugar
- Freshly cracked black pepper
- 1/4 cup cider vinegar, preferably unfiltered
- 6 potato or dinner rolls, split
Beet-Carrot-Apple Juice
