Pumpkin Nut Bread

Sift together flour, baking powder, baking soda, salt, and spices
- 2 C flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 C sugar
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 eggs
- 1 C pumpkin
- 1/2 C milk
- 1/4 C softened butter
- 1 C chopped pecans, or raisins

Tomato Soup

We wanted to recreate a creamy tomato soup with a perfectly velvety texture without actually resorting t use cream
- 1/4 C extra virgin olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1/4 tsp. red pepper flakes
- 1 bay leaf
- 1 28 oz. cans whole tomatoes packed in juice
- 2 T brown sugar
- 1 large slice sandwich bread, crust removed, torn into pieces
- 2 C vegetable broth
- 1/2 C fresh chopped basil
- 1 tsp. lemon juice
- 2 T brandy (optional)
- salt and pepper to taste
- chives or croutons for garnish
Chicken Pot Pie

Preheat the oven to 350 degrees F
- For the filling:
- 3 whole (6 split) chicken breasts, bone-in, skin-on
- 3 tablespoons olive oil
- Kosher salt
- Freshly ground black pepper
- 5 cups chicken stock, preferably homemade
- 2 chicken bouillon cubes
- 12 tablespoons (1 1/2 sticks) unsalted butter
- 2 cups yellow onions, chopped (2 onions)
- 3/4 cup all-purpose flour
- 1/4 cup heavy cream
- 2 cups medium-diced carrots, blanched for 2 minutes
- 1 (10-ounce) package frozen peas (2 cups)
- 1 1/2 cups frozen small whole onions
- 1/2 cup minced fresh parsley leaves
- For the pastry:
- 3 cups all-purpose flour
- 1 1/2 teaspoons kosher salt
- 1 teaspoon baking powder
- 1/2 cup vegetable shortening
- 1/4 pound cold unsalted butter, diced
- 1/2 to 2/3 cup ice water
- 1 egg beaten with 1 tablespoon water, for egg wash
