Orange Cream Puffs

Ingredients

  • Puffs:
  • 1 C flour
  • 3/4 tsp. baking powder
  • pinch of salt
  • 1 stick + 1 T butter
  • 3/4 C water
  • 5 large eggs
  • Filling:
  • 3 1/2 C heavy whipping cream
  • 1/2 C confectioners' sugar
  • 1/4 C finely grated orange zest (3 oranges)
  • 1/4 C orange liqueur

Preparation

Step 1

Arrange oven racks to divide oven into thirds. Heat oven to 450 degrees. You will need 2 large baking sheets, lined with parchment paper.

Whisk flour, baking powder, and salt in a small bowl. Bring water and butter to a boil in a 3-qt. saucepan over medium high heat until butter melts. Add flour mixture all at once, and stir vigorously with a wooden spoon until mixture comes together. Cook, stirring constantly for 2 minutes. Transfer hot dough to your large mixer bowl.

With the mixer on medium speed, beat eggs, 1 at a time, into dough until each is blended (dough will be thick and shiny). Cut 1/2" off the corner of a gallon size zip lock bag. Spoon the warm dough into the bag. Pipe 1 1/4" wide ball shaped mounds 1 1/2' apart on the lined baking sheets.

Bake for 10 minutes until puffed and beginning to brown. Reduce temperature to 350 degrees and bake 10 to 15 minutes longer until golden and baked through. Cool completely. Cut the tops off the puff, pull out a little of the inside of the puff in order to make room for the filling.

Whip the cream in your mixer, adding the orange zest and orange liqueur and fill the cream puffs just before serving.
