Firecracker Shrimp

1.Nick the shrimp a few times along the inside of their curve to help them stay straight
- 1/2 pound large shrimp, peeled with tails on and deviened
- 1 tablespoon sweet chili sauce
- 1 tablespoon fish sauce (or soy sauce)
- 1 teaspoon sesame oil
- 2 teaspoons garlic, grated
- 2 teaspoons ginger, grated
- 1 teaspoon cornstarch
- 12 egg roll wrappers, cut in half into 2 triangles
- 2 tablespoons water
- 2 teaspoons cornstarch
- oil for frying
- sweet chili sauce for dipping
Easy Chicken Fajitas

1.Preheat oven to 250 degrees
- 1 1 1 tablespoon chili powder
- 1 1 1 teaspoon cumin
- 1 1 1 teaspoon paprika
- 1/4 1/4 1/4 teaspoon cayenne pepper
- 1/4 1/4 1/4 teaspoon garlic powder
- 1 1 1 teaspoon salt
- 1 1 1 teaspoon ground black pepper
- 3 3 3 tablespoons olive oil, divided
- 1 1/2 1 1/2 1/2 pounds boneless, skinless chicken breast, sliced into strips
- 2 2 2 bell peppers, sliced
- 1 1 1 onion, thinly sliced
- 8 8 8 small tortillas

Indian Chickpea Dip

Blend beans, sour cream, jam, mustard, curry powder and salt in food processor until smooth
- 1 (15 ounce) can reduced sodium chick peas, rinsed and drained
- 1/2 cup light sour cream
- 1/4 cup chutney or apricot jam, chopped
- 1/4 cup French's Classic Yellow Mustard
- 2 teaspoons curry powder
- 1/4 teaspoon salt
- 1/4 cup chopped cilantro (optional)
White Chili

In a large saucepan, heat a small amount of oil and saute the onion
- 2 pounds chicken breasts, no skin, no bone, cut into pieces
- 2 onions, chopped
- 2 1/2 cups chicken broth, canned or homemade
- 1 (7 oz.) can green chiles, chopped
- 1 (16 oz.) jar salsa verde (green salsa)
- 1 teaspoon each: cumin and garlic powder
- 1 teaspoon oregano
- 3 cups white beans, cooked (use canned or make yourself)
- 1/2 bunch cilantro, chopped--optional
- 1 pound low-fat jack cheese, grated
Creamy Cauliflower "Alfredo" Sauce

Garlic: Saute the minced garlic with the butter in a large nonstick skillet over low heat
- 8 large cloves garlic, minced
- 2 tablespoons butter
- 5-6 cups cauliflower florets
- 6-7 cups vegetable broth or water
- 1 teaspoon salt (more to taste)
- 1/2 teaspoon pepper (more to taste)
- 1/2 cup milk (more to taste)

- 1 teaspoon apple cider vinegar (or use 1 teaspoon of pickle juice)
- 1/2 teaspoon dijon mustard
- 1 teaspoon barbecue sauce
