PASTA E FAGIOLI

Bring a pot of water to boil for the pasta and preheat another large pan over medium heat
- 2 Tbsp olive oil
- 6 cloves (!) garlic, minced
- 2 lb Plum tomatoes, diced medium
- 1/4 cup dry white wine (or vegetable broth)
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- a few dashes fresh black pepper
- 1 tsp salt
- 1 can (6 oz) white beans, washed and drained
- 1/2 lb small tube pasta, like penette or tubetti, or even small shells
Cashew Dipping Sauce

Good with Vietnamese Spring Rolls
- 2 tablespoons sugar
- 3/4 cup water
- 1 cup cashews, unsalted
- 1 tablespoon creamy peanut butter
- 1 tablespoon rice wine vinegar
- 1 tablespoon fresh lime juice
- 2 tablespoons ginger, fresh,minced
- 3 tablespoons soy sauce
- 1-3 teaspoon red pepper flakes, according to taste
- salt and pepper

To make the spice rub, combine chili powder, cumin, oregano and salt in a small bowl
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon kosher salt
- 3-4 pounds chuck roast
- 2 tablespoons canola oil
- 2 1/2 cups orange juice
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 jalapeno, thinly sliced
- 1 ball pizza dough, homemade or storebought
- 1/4 cup semolina or yellow cornmeal
- 1 cup tomatillo salsa
- 12 ounces mozzarella, thinly sliced
- 2 green onions, sliced
- 1/4 cup chipotle avocado mayonnaise
- Diced avocado, for serving
Mac & Cheese

Preheat oven to 350 degrees F (175 degrees C)
- +8 ounces penne pasta
- +1 onion, chopped
- +1 clove garlic, minced
- 3 cups half & half or milk
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups Cabot New York Sharp Cheddar, shredded (sold as an 8oz. block of cheese)
- 1 cup whole milk mozzarella, shredded
- 1/2 cup parmigiano-reggiano, finely grated
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme
- 2 tbsp fresh basil, chopped
- 1 1/2 to 2 tbsp green onion, chopped
- 4 cloves fresh garlic, minced (not the stuff in the jar)
- generous pinch of nutmeg (about 1/8 tsp or less)
- generous pinch of cayenne pepper (about 1/8 tsp or less)
- Kosher salt and freshly ground black pepper to taste
- 6 slices of semi-crisp hardwood smoked bacon, chopped (feel free to use more if you'd like)
- 2 to 3 tablespoons seasoned breadcrumbs (optional)
- Salt to season the pasta water

- 4 ounces cashews, dry-roasted cashews
- 8 ounces skinless boneless chicken breast, cubed
- 1 carrot, cubed
- 1/2 green pepper, diced

- 2 green onions, diced
- 1 clove garlic, minced

- 1 egg white
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- 1 teaspoon cornstarch
- 1 teaspoon chinese cooking wine

- 1/2 teaspoon sugar

Everybody loves this poppy seed roll, even people who don't like poppy seeds love it
- FOR THE DOUGH:
- 1/2 cup of warm water
- 1 teaspoon sugar
- 1 package yeast (1 tablespoon)
- 3 2/3 cups all purpose or unbleached flour
- 1/2 cup of sugar
- 6 tablespoons soft butter
- 1 beaten egg
- Grated peel of 1 lemon
- 2/3 cup warm milk
- FOR THE POPPY SEED FILLING:
- 2 1/3 to 3 cups poppy seeds (ground)
- 1 cup HOT, BOILING, MILK (or light cream)
- 6 tablespoons butter
- 2/3 cup sugar
- Honey to taste (optional)
- 1/2 teaspoon almond flavouring (or vanilla)
- 3/4 cup golden raisins (or finely chopped up prunes)
- 2/3 cup finely chopped almonds (or pecans or walnuts)
