Salmon with Coconut Citrus Butter and Chive Mashed Potatoes

To make the citrus butter, combine the wine and citrus juices in a medium saucepan over medium heat
- Ingredients for Salmon and Coconut Citrus Butter
- 1/2 * 1/2 cup dry white wine
- 1/2 * 1/2 cup freshly squeezed pink grapefruit juice
- 1 * 1 cup freshly squeezed orange juice
- 2 * 2 tablespoons freshly squeezed lemon juice
- 1 * 1 tablespoon freshly squeezed lime juice
- 1/4 * 1/4 cup heavy cream (I used coconut milk)
- 1/2 * 1/2 lb of unsalted butter (I only used 4 tbsp)
- * kosher salt
- * pinch of sugar, if necessary
- 4 * 4 x 6 oz salmon fillets, at least 1 inch thick, skin and any pin bones removed
- * coarse black pepper
- 3 * 3 tablespoons of canola
Prosciutto, Olive, Tomato

Mix and then wrap olives, sun-dried tomatoes, and ricotta cheese into slices of prosciutto
- Slices of Prosciutto
- Chopped olives
- Sun-dried tomatoes
- Ricotta
Italian Tuna Salad

Cover the sun-dried tomatoes with hot water in a bowl
- 4 sun-dried tomatoes
- 1/4 red onion, minced
- 1 (12-ounce) can solid white albacore tuna in water, drained
- 1 rib celery, chopped
- 1/4 cup pitted nicoise olives
- 1 tablespoon capers, rinsed
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon finely grated lemon zest
- Juice of 1/2 a lemon
- 2 tablespoons chopped fresh basil leaves
- Kosher salt and freshly ground black pepper
- Suggested serving: whole grain breads or bountiful greens
Pumpkin Cake - Frosted

1. Preheat oven to 350°. 2
- Cake:
- 10.1 ounces all-purpose flour (about 2 1/4 cups)
- 2 1/2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1 cup packed brown sugar
- 1/4 cup butter, softened
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 (15-ounce) can pumpkin puree
- Cooking spray
- Frosting:
- 2 tablespoons butter, softened
- 1/2 teaspoon vanilla extract
- 1 (8-ounce) package 1/3-less-fat cream cheese
- 2 cups sifted powdered sugar
Pillsbury Breakfast Sandwich

Bake Pillsbury Grands Buttermilk Biscuits as directed on package; keep warm
- 1 can Pillsbury Grands Refrigerated Buttermilk
- Biscuits - (1 lb 0.3-oz)
- 8 slices Hormel Bacon crisply cooked, and cut in half
- 1 tablespoon margarine or butter
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped onion
- 8 eggs
- 1/4 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
- 8 slices American pasteurized process cheese food (2/3 oz ea)

- 4 lbs pork ribs
- 3/4 cup light brown sugar
- 1 teaspoon hickory smoke salt
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1/2 teaspoon ground red pepper (optional)
- 2 cups of your favorite barbecue sauce (mine is Sweet Baby Ray)
BBQ Ribs (Crockpot)

Cut ribs into serving-size pieces and sprinkle with pepper
- 2 racks pork baby back ribs (about 4 1/2 lbs)
- 1 1/2 tsp pepper
- 2 1/2 cups BBQ sauce
- 3/4 cup cherry preserves
- 1 tbsp Dijon mustard
- 1 garlic clove, minced
Baked Potato Chips

Preheat oven to 375. Line a baking pan with aluminum foil, grease lightly with baking spray and set aside
- 4 medium sized red potatoes, washed, sliced into thin rounds, about 1/4-inch thick (I use a mandolin to cut even rounds)

- freshly ground peppercorns
- 5 or 6 strips of bacon, cooked until crisp, crumbled
- shredded monterey jack cheese
- shredded cheddar cheese
