Egg Salad Sandwich with Avocado and Watercress

- 1/4 * 1/4 cup mayonnaise, plus extra, if you like, for spreading
- 1 * 1 teaspoon Dijon mustard
- 1/2 * 1/2 lemon, juiced
- * Salt and freshly ground black pepper
- 8 * 8 slices whole grain bread, toasted
- 1 * 1 avocado, halved, peeled, seeded and sliced lengthwise

- 3-4 cups water or vegetable broth
- 1 1/2 cups quinoa, uncooked
- 1/4 cup apple cider vinegar (you may use any flavor you prefer)
- 2 cloves garlic, minced
- juice from one lemon
- 3 tbsp olive oil
- 1/2 cup kalamata olives, sliced if desired
- 1/3 cup fresh parsley, chopped
- 1/3 cup fresh cilantro, chopped
- 1 red onion, diced
- 1 cup cherry tomatoes, sliced in half
- 1/2 cup chopped artichoke hearts (optional)
- salt and pepper to taste
- 1/2 cup crumbled feta cheese
Cabbage Salad

- Dressing:
- 1 package of shredded cabbage (Napa)
- 1 cup slivered almonds
- 1 cup sunflower seeds
- 2 packages of oriental or chicken Ramen noodles
- 5-10 green onions, chopped
- 1/2 stick of butter
- 1 cup oil
- 1/2 cup sugar (or more)
- 1/2 cup white vinegar
- 1-2 powdered packets from noodles (optional)
- 1 tbsp soy sauce
- 1/2 tsp salt

- 3/4 cup butter, divided
- 1 package (16 ounces) chocolate cream-filled sandwich cookies, crushed
- 8 cups mint chocolate chip ice cream, softened
- 1-1/2 cups milk chocolate chips
- 1 cup confectioners' sugar
- 3/4 cup evaporated milk
- 1 carton (16 ounces) frozen whipped topping, thawed
- Chocolate syrup and red and green sprinkles, optional
