Phyllo Pizza w/ Mozzarella & Cherry Tomatoes

Preheat oven to 400°F. Toss tomatoes, olive oil, salt, and oregano in medium bowl
- 12 to 13 ounces cherry tomatoes and/or pear tomatoes

1. Cook onion, garlic, pepper in butter until onions tender
- 8 corn tortillas
- 1/2 cup chopped onion
- 4 cloves minced garlic
- 1/2 tsp pepper
- 2 tbsp butter
- 3 tbsp flour
- 8 oz sour cream
- 2 cups chicken broth
- 1 or 2 Jalepeno pepper
- 1 cup shredded jack cheese
- 2 cups chopped, cooked chicken

Preheat oven to 350 degrees
- 3 c. lean cooked ham, diced
- 1 med. onion, sliced
- 1 sm. green pepper, sliced in rings
- 1 c. canned pineapple cubes with juice
- 1/2 c. seedless raisins
- 2 tsp. dry mustard
- 1/4 c. brown sugar
- 1 tbsp. cornstarch
- 1/4 tsp. salt
- 1/3 c. vinegar
- 1 tsp. Worcestershire sauce
- 1 tbsp. soy sauce (opt.)

For the crust: Adjust an oven rack to the lower-middle position and heat the oven to 325 degrees

- 5 Tbsp unsalted butter, melted, plus 1 Tbsp melted for the pan
- 8 whole graham crackers (4 ounces) broken into rough pieces and processed in a food processor to fine, even crumbs
- 1 Tbsp sugar
- Filling:
- 2 1/2 lbs (five 8-ounce packages) cream cheese, cut into rough 1-inch chunks, at room temperature
- 1/8 tsp salt
- 1 1/2 cups (10 1/2 ounces) sugar
- 1/3 up sour cream
- 2 tsp juice from 1 lemon
- 2 tsp vanilla extract
- 2 large egg yolks, plus 6 large eggs, at room temperature
Kielbasa in Beer-Mustard Sauce

Slice the kielbasa into 1-inch rounds
- 2 lbs Polish sausage
- 1 large onion, quartered and sliced 1/2 inch peices
- 2/3 cup beer (use a favorite)
- 1/3 cup brown sugar
- 1/4 cup vinegar
- 1/4 cup prepared mustard (any kind will work, I like dark brown)
- 1 Tbsp cornstarch
- 2 tsp water
