Chicken Tortellini Soup

In a Dutch oven, combine the broth, tomatoes, spinach, Parmesan cheese, salt and pepper
- 8 c. chicken broth
- 1 can (14 1/2 oz.) stewed diced tomatoes
- 1 (10 oz.) pkg. frozen chopped spinach, thawed
- 1/4 c. grated Parmesan
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (9 oz.) pkg. cheese tortellini
- 2 c. cooked cubed chicken
Bag of Salad and Dressing

For Dressing: Whisk together first 6 ingredients in a small bowl until blended
- Cider Vinegar-Honey Dressing:
- 1/4 c. cider vinegar
- 4 1/2 tsp. honey
- 1/2 tsp. lemon zest
- 1 1/2 tsp. fresh lemon juice
- 1/4 tsp. salt
- 1/8 tsp. freshly ground pepper
- 1/4 c. + 2 Tb. extra-virgin olive oil
- Goat Cheese-Cranberry Salad:
- 1/3 c. chopped pecans, toasted
- 1 (5 oz.) pkg. spring lettuce mix
- 1/2 (4 oz.) goat cheese log, crumbled
- 1/2 c. sweetened dried cranberries
- Avocado-Orange Salad:
- 1/3 c. almonds, toasted
- 1 (5 oz.) pkg. spring lettuce mix
- 1 avocado, chopped
- 2 oranges, peeled and sectioned
- Baby Greens with Blue Cheese and Grapes:
- 1 (5 oz.) pkg. spring lettuce mix
- 2 oz. crumbled blue cheese
- 1 c. red grapes, halved
- 1/4 c. thinly sliced red onions
- 2 Tb. chopped honey-roasted peanuts
Chicken-Rice Soup

Place oil in a large Dutch oven over medium heat
- 1 Tb. vegetable oil
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 tsp. finely chopped fresh ginger
- 1 1/2 lbs. boneless chicken, cut into 1" pieces
- 2 Tb. soy sauce
- 6 c. water
- 1 c. uncooked rice
- 1 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- finely sliced green onions to garnish
Dijon Crusted Chicken Breasts

1. Place the first six ingredients in a shallow bowl
- 1/3 c. dry bread crumbs
- 1 Tb. grated Parmesan cheese
- 1 tsp. Italian seasoning
- 1/2 tsp. dried thyme
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 boneless skinless chicken breasts
- 2 Tb. Dijon mustard
- 1 tsp. olive oil
- 1 tsp. reduced-fat margarine
Black Bean Salsa

Saute onion, bell pepper, and garlic in oil in skillet until tender
- 1 c. chopped red onion
- 1/2 c. chopped bell pepper
- 1 clove garlic, crushed
- 2 Tb. oil
- 1 (16 oz.) can black beans
- 1/2 tsp. salt
- 4 plum tomatoes, chopped
- 2 Tb. chopped cilantro
- 3 Tb. fresh lime juice
- 1 1/2 tsp. hot pepper sauce
- 1 tsp. grated lime rind
Golden Onion Soup

In a saucepan over medium-low heat, cook onions in butter until tender, about 10 minutes
- 2 c. quartered, thinly sliced onions
- 1/2 c. butter
- 1/4 c. flour
- 2 c. chicken broth
- 2 c. milk
- 2 c. shredded mozzarella cheese

- 1 lb. ground beef
- 1 (6 oz.) pkg. pepperoni, finely chopped
- 1 c. finely chopped onion
- 1 c. minced fresh mushrooms
- 1 c. panko breadcrumbs

- 2 large eggs, lightly beaten
- 2 (24 oz.) jars pasta sauce
- 5 unsliced sub rolls
- 2 (8 oz.) pkg. shredded whole-milk mozzarella cheese

Onion Soup Gratinee

- 1/4 c. olive oil, or vegetable oil
- 4 yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1/2 c. brandy
- 6 c. beef or chicken broth, heated
- 1 spice sachet*, including 1 sprig fresh tarragon or 1/2 tsp. dried
- salt and freshly ground pepper
- 8 (1/4"thick) slices French bread
- 1 c. shredded Gruyere cheese, or as needed
- 8 c. boiling water, or as needed

- 1 1/3 cups lukewarm water
- 2 tablespoons olive oil or toasted sesame oil
- Topping:
- 5 teaspoons sesame seeds
- 1 egg white, whisked with 1 tablespoon cold water
