Muffaletta Spread

In a food processor, combine olives and garlic
- 1 1/4 c. pimiento-stuffed green olives
- 1 1/4 c. pitted Kalamata olives
- 3 cloves garlic
- 1/3 c. olive oil
- 2 Tb. red wine vinegar
- 1/2 c. finely chopped salami, (about 2 oz.)
- 1/2 c. finely chopped capocollo, or cooked ham (2 oz.)
- 1/2 c. shredded provolone cheese, (about 2 oz.)
- 2 Tb. snipped fresh parsley
- 1 tsp. dried Italian seasoning, crushed
- 1/4 tsp. ground black pepper
- Toasted baguette-style French bread slices
Raspberry Lemon Muffins

1. Preheat the oven to 400 degrees F (200 degrees C)
- 1/2 c. plain yogurt
- 3 Tb. vegetable oil
- 1 Tb. lemon juice
- 2 egg whites
- 1/2 tsp. lemon extract, (optional)
- 1 1/2 c. all-purpose flour
- 3/4 c. white sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. grated lemon zest
- 1 c. frozen raspberries
- 2 Tb. white sugar for decoration, (optional)
Candied Sweet Potatoes

Arrange sweet potato slices, slightly overlapping, in 10" pie plate
- 2 sweet potatoes, peeled and sliced
- 2 Tb. butter
- 1/2 c. packed brown sugar
- 2 Tb. light corn syrup
- 1 Tb. unsweetened pineapple juice
- 1/8 tsp. ground allspice
- 2 c. miniature marshmallows
Chocolate Chunks with Cherries and Pistachios

1. In a large microwaveable bowl, combine chocolate, milk, butter, and salt
- 12 oz. bittersweet Baker's chocolate, chopped
- 1/2 c. whole milk
- 3 Tb. unsalted butter
- 1/4 tsp. salt
- 1 c. shelled pistachios
- 1 c. dried tart cherries
Criolla Remoulade

1. Stir together all ingredients; cover and chill 1 hour to 1 week
- This is the classic mayonnaise-based remoulade, spiked with a touch of seafood seasoning.
- 1 c. mayonnaise
- 1/4 c. creole mustard
- 1/4 c. chopped sweet pickles
- 1 Tb. capers, drained
- 2 tsp. Worcestershire sauce
- 2 tsp. horseradish
- 2 tsp. anchovy paste
- 1 tsp. Old Bay seasoning
- 1 tsp. paprika
Red Cabbage Casserole

In a Dutch oven, combine the first six ingredients
- 8 c. shredded red cabbage
- 1 medium onion, chopped
- 1/4 c. sugar
- 1 Tb. canola oil
- 1 tsp. salt
- 1 tsp. lemon juice
- 2 medium tart apples, chopped
- 1/4 c. red currant jelly
Shrimp Fried Rice

Cook rice to pkg. directions; set aside
- 1 c. uncooked long grain white rice
- 1 clove garlic, peeled
- 1 Tb. oil
- 1 1/4 lb. peeled shrimp
- 1 egg, beaten
- 1 bay leaf
- 1 1/2 c. water
- 1/2 tsp. soy sauce
- 1/2 onion, chopped
- 2 green onions, chopped
- salt, pepper, curry powder to taste
Honey-Glazed Ham Steaks

This is great served with scalloped potatoes and a crisp green salad
- 1/4 c. brown sugar, packed
- 2 Tb. honey
- 4 ham steaks
Classic Brownies

Be sure to test for doneness before removing the brownies from the oven
- 1 cup pecans or walnuts (4 ounces), chopped medium (optional)
- 1 1/4 cups plain cake flour (5 ounces)
- 1/2 teaspoon table salt
- 3/4 teaspoon baking powder
- 6 ounces unsweetened chocolate , chopped fine
- 12 tablespoons unsalted butter (1 1/2 sticks), cut into six 1-inch pieces
- 2 1/4 cups sugar (15 3/4 ounces)
- 4 large eggs
- 1 tablespoon vanilla extract
Crispy 'n' Sweet Pumpkin Dumplings

- 1 (15 oz.) can pumpkin
- 1/4 c. sugar
- 2 Tb. light brown sugar
- 2 Tb. honey
- 3/4 tsp. pumpkin pie spice
- 1/2 (16 oz.) pkg. won ton wrappers
- vegetable oil
- powdered sugar
