Crispy Maple Bacon

Line the bottom of a broiler pan with heavy-duty foil
- 1 lb. sliced bacon
- 1/2 c. maple syrup
- 1 tsp. Dijon mustard

1. Brush melted butter on 1 side of 16 bread slices
- 2 Tb. melted butter
- 16 (1/2" thick) Italian bread slices
- wax paper
- 1 c. shredded Swiss cheese
- 3 c. chopped cooked chicken or turkey
- 4 plum tomatoes, sliced
- White Cheese Sauce: warmed and divided
- 1/4 c. butter
- 1/4 c. all-purpose flour
- 3 1/2 c. milk
- 1 c. (4 oz.) shredded Swiss cheese
- 1 c. grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. ground red pepper
- 13 cooked bacon slices, crumbled
Corn Souffle

Sauteed Sugar Snap Peas

- 1 Tb. mocha-flavored instant cappuccino powder
- 2 Tb. sugar
- 1/2 c. semisweet chocolate morsels

Hot Buttered Cider

Spice Mixture: Cream butter and brown sugar in a small bowl
- Spice Mixture:
- 1/2 c. unsalted butter
- 1 1/2 c. light brown sugar
- 1/4 tsp. each ground cinnamon, nutmeg, allspice and cloves

- 1 oz. dark rum, opt.

Orange Slices with Citrus Syrup

- 4 oranges
- Zest of 1 orange, cut into julienne 4" long and 1/8" wide
- FOR THE SYRUP
- 1 1/2 c. fresh orange juice, strained
- 2 Tb. dark honey
- 2 Tb. orange liqueur such as Grand Marnier or Cointreau (opt.)
- 4 fresh mint sprigs
Cappuccino Hot Chocolate

- 6 c. half and half, or milk
- 3 Tb. instant expresso powder, or instant coffee powder
- 6 oz. imported bittersweet chocolate, (or semisweet chocolate), chopped
- 6 Tb. brandy
