Margaritas (skinny)

Stir all ingredients together, except for the ice
- 6 oz. diet lemon-lime soda
- 1 1/2 oz. tequila
- 1 packet sugar free powdered lemondade drink mix, (two 5-calorie servings)
- 2 Tb. lime juice
- 5-8 ice cubes

Bake at 325 degrees for 45 minutes
- Mix and press into 9x13 pan:
- 1 pkg. yellow cake mix
- 1 stick melted butter
- 1 egg
- Sprinkle 12 oz. chocolate chips and 1 cup nuts over this and then pour the following mixture on top.
- Combine 2 eggs, 8 oz. cream cheese, 1 small can coconut and 1 lb. powdered sugar.

- For the bread:
- 1 1/2 cups all-purpose flour
- 1/2 tsp. baking powder
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. ground ginger
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. allspice
- 1 tsp. ground cinnamon
- 10 Tbs. (1 1/4 sticks) unsalted butter, melted
- 1/2 cup firmly packed dark brown sugar
- 1 cup granulated sugar
- 2 tsp. finely chopped orange zest
- 3 eggs, lightly beaten
- 1 cup pumpkin puree
- For the glaze:
- 3/4 cup water
- Zest of 1 orange
- 2 Tbs. finely chopped, peeled fresh ginger
- 1/2 cup granulated sugar

- 1 package. frozen chopped broccoli
- 1 cream of mushroom soup
- 1 roll garlic cheese
- 1 can chopped mushrooms
- 2 stalks celery, chopped
- 1 onion, chopped fine
- 3/4 stick butter
- 1 can water chestnuts, chopped
- 2 Tb. Worchestershire sauce
Rosemary-Lemon No-Knead Bread

- 1/4 tsp. active dry yeast
- 1 3/4 tsp. salt

Raspberry Glazed Salmon

- 1 c. (8 oz.) evaporated milk
- 3 large eggs, lightly beaten
- Topping: whipped cream with pinch of ginger and tsp. of vanilla

DIRECTIONS: 1. Heat the oil in a medium saucepan over medium heat
- 3/4 teaspoon vegetable oil
- 3/4 onion, chopped
- 2-1/2 cloves garlic, peeled and chopped
- 1/2 cup and 1 tablespoon and 2 teaspoons uncooked quinoa
- 1 cup and 3 tablespoons vegetable broth
- 3/4 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
- 3/4 cup and 2 teaspoons frozen corn kernels
- 1-5/8 (15 ounce) cans black beans, rinsed and drained
- 1/3 cup and 1 tablespoon chopped fresh cilantro
