Pumpkin Cheesecake

Heat oven to 325 degrees. Wrap outside bottom and side of 9" springform pan with foil to prevent leaking
- Crust:
- 1 3/4 cc. graham cracker crumbs, (about 28 squares)
- 2 Tb. sugar
- 1/2 c. butter, melted
- Filling:
- 1/4 c. flour
- 2 tsp. pumpkin pie spice
- 2 Tb. brandy, if desired
- 1 can (15 oz.) pumpkin
- 4 (8 oz.) pkg. cream cheese, softened
- 1 c. packed brown sugar
- 2/3 c. sugar
- 5 eggs
- opt. whipped topping
Almond Joy Cake

FOR CAKE: Do not use mixer
- Double Fudge Cake:
- 1/2 c. cocoa
- 1 c. water
- 1 stick butter
- 1/2 c. shortening
- 2 c. flour, sifted
- 2 c. sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1/2 c. buttermilk
- 2 eggs, beaten
- First Filling:
- 1 c. evaporated milk
- 1 c. sugar
- 30 large marshmallows
- 3 c. flaked coconut
- Second Filling:
- 1 stick butter
- 1/2 c. evaporated milk
- 1 1/2 c. semi-sweet chocolate chips
- 1 c. chopped almonds
Easy Butter-Pecan Rolls

1. In a bowl, stir together powdered sugar and cream
- 1 c. sifted powdered sugar
- 1/3 c. whipping cream
- 1 c. coarsely chopped pecans
- 1/2 c. packed brown sugar
- 1 Tb. ground cinnamon
- 2 tsp. flour
- 2 (14-16 oz.) loaves frozen sweet roll dough, thawed
- 1/4 c. butter , melted
- 1/2 c. semisweet chocolate chips

Chili Verde with Lime Cilantro Cream

This hearty stew is delicious made with pork, beef, or chicken, your choice
- Stew:
- 1/2 cup (2 ounces) King Arthur Unbleached All-Purpose Flour
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons ground black pepper
- 1 tablespoon ground cumin
- 3 pounds boneless pork, beef or chicken (fat removed, cut into 1" cubes)*
- 1/4 cup (1 3/4 ounces) vegetable oil
- 1 1/2 cups (7 1/2 ounces) diced onions
- 1 1/2 cups (6 ounces) coarsely chopped red peppers
- 1 1/2 cups (6 ounces) coarsely chopped green peppers
- 1 1/2 cups (8 ounces) cleaned, diced tomatillos, (or 3/4 cup salsa verde)
- 2 cans (15 ounces each) chicken broth
- 2 cans (15 ounces each) diced tomatoes, (undrained)
- 1 tablespoon diced jalape�epper
- 3 cloves garlic, minced
- cilantro, for garnish
- Lime Cilantro Cream:
- 1 cup (8 ounces) sour cream
- 2 tablespoons chopped fresh cilantro
- 2 teaspoons grated lime zest or 1/4 teaspoon lime oil
- 1 tablespoon fresh lime juice
- 1/2 teaspoon chili seasoning or ground cumin
- salt and pepper to taste
- Pineapple Salsa
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup (10 ounces) fresh diced pineapple
- 1/2 teaspoon chili seasoning or ground cumin
- 1/4 teaspoon salt

- 1 c. graham cracker crumbs, (8 whole crackers, broken into rough pieces and processed in food processor until fine)
- 1 Tb. sugar
- 5 Tb. unsalted butter, melted (+ 1 Tb. melted butter for greasing pan)
- Cheesecake Filling:
- 2 1/2 lbs. cream cheese, cut into rough 1" chunks and left to stand at room temperature for 30-45 minutes
- 1/8 tsp. table salt
- 1 1/2 c. sugar
- 1/3 c. sour cream
- 2 tsp. juice from 1 lemon
- 2 tsp. vanilla extract
- 2 large egg yolks + 6 large whole eggs
Orange-Sauced Roughy

Combine juice, broth, cornstarch, sugar, and thyme in 1-qt
- 1/2 c. fresh orange juice
- 1/3 c. chicken broth, or dry white wine
- 2 tsp. cornstarch
- 1 tsp. sugar
- 1/4 tsp. dried thyme leaves
- 1 lb. orange roughy fillets, about 1/2" thick, cut into serving-size pieces

- 2/3 c. regular oats, (not instant)
- 1/3 c. Bisquick Heart Smart baking mix
- 3/4 c. blueberries
- 1/3 c. light vanilla soymilk
- 1 Tb. brown sugar, (not packed)
- 2 tsp. light whipped butter or light buttery spread, softened
- 1/2 tsp. baking powder
Poblano Chicken with Peanuts

In a saucepan at medium heat, heat the oil for 30 seconds and add chicken
- 1 (6-8 oz.) boneless, skinless, chicken breast, cut into strips
- 2 oz. peanut oil
- 2 skinless, seedless poblano peppers, roasted on the stovetop or grill
- 1 cup water
- 1/2 cup cilantro
- salted peanuts
Easy Chocolate Mousse, Three Ways

- Basic Chocolate Mousse:
- 8 oz. semisweet Baker's chocolate, chopped
- 2 (8 oz.) containers Cool Whip topping
- 1/2 c. toasted coconut, slivered nuts, or crushed candy
- Malted Chocolate Mousse:
- 1/3 c. malted milk powder
- 1/2 c. Whoppers candies, crushed
