Easy Garlic Rolls

In a small bowl, combine melted butter, parsley, and garlic salt; set aside
- 1/4 c. butter, melted and cooled
- 1 Tb. chopped fresh parsley
- 1/2 tsp. garlic salt
- 1 pkg. frozen yeast roll dough, thawed
Margaritas from Los Tres Bobos

- 1 oz. triple sec
- 1 1/2 oz. tequila
- 3/4 oz. simple syrup
- 1-1 1/2 oz. lime juice concentrate, undiluted
Nuevo Texas Waldorf Salad

TO MAKE THE WONTON STRIPS: Use kitchen scissors to cut the wonton sheets into 3/4" wide strips
- Fried Wonton Strips:
- 4 sheets packaged wonton or egg roll wrappers
- olive oil , for frying
- Rosemary Vinaigrette:
- 1/3 c. fresh rosemary leaves
- 2 cloves garlic
- 1/4 medium-size red onion
- 1 Tb. Dijon mustard
- 1/4 c. honey
- 1/2 c. white balsamic vinegar
- 1 1/2 tsp. salt
- freshly ground pepper to taste
- 1/2-1 c. extra-virgin olive oil
- Salad:
- 1/2 c. pecans
- 3 sweet-tart apples, (such as Braeburn, Medina, or Granny Smith)
- 4 c. organic mixed greens
- 1/2 c. crumbled blue cheese, (such as Stilton)
Cauliflower Soup

Steam cauliflower, celery and carrots for 10 minutes or until crisp-tender
- 2 c. cauliflower florets
- 4 celery ribs, diced
- 3 carrots, chopped
- 1 can cream of chicken soup, undiluted
- 1 c. milk
- 4 oz. Velveeta cheese, cubed
- 1/4 tsp. salt
- 1/2 tsp. pepper
- paprika
Chili's Monterey Chicken

Pound chicken breast until it is flattened; season with salt and pepper
- 1 boneless skinless chicken breast
- 2 teaspoons barbeque sauce, (Bull's Eye is best)
- 2 slices well cooked bacon, drained
- 1/4 c.. mixture of Monterey Jack and sharp cheddar cheese
Green Chile Corn Casserole

This is a vegetarian-friendly version but you can strips of crumbled, crisp-fried bacon for more flavor
- 1/4 c. butter
- 1/2 c. onion, finely chopped
- 1 poblano pepper, finely chopped
- 1 pinch of salt
- 2 garlic cloves, minced
- 1 c. sour cream
- 1 egg, beaten
- 1 (11 oz.) can white shoepeg corn, drained
- 1 (11 oz.) can Mexi-corn
- 1 (16 oz.) can cream corn
- 3 (4 oz.) cans diced green chilies
- 1 c. shredded pepper jack cheese, divided
- 1 (9 oz.) pkg. corn muffin mix
- salt and freshly ground pepper to taste
Nutty Caramel Acorns

Heat oven to 350 degrees. Beat butter, sugar and yolks in a large bowl with mixer on medium speed until fluffy
- 1 stick butter, softened
- 1/3 c. packed dark brown sugar
- 2 large egg yolks
- 1 c. chopped nuts, (walnuts, cashews, peanuts or favorite)
- 1 1/2 tsp. vanilla
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 3/4 c. flour
- 1/2 c. chocolate sprinkles
- 1 pkg. (14 oz.) classic caramels, (such as Kraft)
- 1 1/2 Tb. water
Turtle Pumpkin Pie

Pour 1/4 c. caramel ice cream topping into crust; spinrkle with 1/2 cup nuts
- 1/4 c. plus 2 Tb. caramel icecream toppng, divided
- 9 " graham cracker crust
- 1/2 c. plus 2 Tb. pecan pieces, divided
- 1 c. milk
- 2 3.4 oz. pkgs. instant vanilla pudding mix
- 1 c. canned pumpkin
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 8 oz. container frozen whipped topping, thawed and divided
