Lemon-Herb Chicken Breasts

Rinse the chicken breasts and pat dry
- 3 Lbs boneless, skinless chicken breast halves
- 1/4 C EVOO
- 3 garlic cloves, finely chopped
- Grated zest and juice of 1 lemon +shredded zest for garnish (optional)
- 2 Tbsp chopped fresh rosemary, + whole leaves & sprigs for garnish (optional)
- 2 Tbsp chopped fresh thyme
- 2 Tsp coarse salt
- 1 Tsp freshly ground pepper, to taste

- 1 pound yellow squash or zucchini, ends trimmed and sliced lengthwise into 1/4" thick slices
