Yummy Summer Salad

Combine all ingredients, except lime
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 basket cherry tomatoes, cut in half
- 1 can water chestnuts, cut in half
- 1 can black olives, cut in half
- 1 can green olives, cut in half
- 2 sm boxes of raisins
- 1 cucumber, cut into chunks
- 1 bunch cilantro, chopped
- 1 basket alphalfa sprouts, optional
- 10 radishes, cut into thirds
- 2 stalks celery
- 1 lime
- Mrs Dash
Cilantro-Cucumber Salsa

In a bowl, combine the cucumber, tomatoes, bell pepper, shallot and chopped cilantro and toss gently to mix
- 1/2 cucumber, peeled, halved lengthwise, seeded, halved lengthwise again and thinly sliced crosswise
- 1 C cherry tomatoes, quartered
- 1/2 yellow or orange bell pepper, seeded and cut into 1" julienne
- 2 Tbs chopped shallot or red onion
- 1 tbs chopped fresh cilantro, + sprigs for garnish
- 1 Tbs lime juice
- 1/2 Tsp canola oil
- 1 Tsp honey
- 1/2 Tsp red pepper flakes
- 1/2 Tsp salt
Three-Cheese Macaroni

Whisk egg, evaporated milk, nutmeg, and salt and pepper to taste in a bowl
- 1 Large Egg
- 1 12 oz Can Evaporated Whole Milk
- Pinch of Cayenne Pepper
- Pinch of Freshly Grated Nutmeg
- Kosher Salt
- Freshly Ground Black Pepper
- 1 1/3 C Grated Muenster Cheese (4 oz) + 4 Deli-thin Slices (1 oz)
- 1/2 C Grated Sharp Cheddar Cheese (2 oz)
- 1/4 C Grated Parmesan Cheese (1 oz)
- 1/2 head Cauliflower, cut into small florets (4 cups)
- 4 C Medium Pasta Shells (9 oz)
Avocado Feta Salsa

Peel and seed avocado. Chop avocado and tomatoes; place in a large bowl
- 1 large avocado
- 2 plum stomatoes
- 1/2 C chopped purple onion
- 1 clove garlice, minced
- 1 Tbsp chopped fresh parsley
- 1/2 Tsp chopped fresh oregano
- 1 Tbsp olive oil
- 1/2 Tbsp red wine vinegar
- 4 Oz package of fets cheese, crumbled

Mac & Cheese with Roasted Chicken

Place a large pot of salted water over high heat and bring to a rapid boil
- 1 Tbsp vegetable oil
- 1 Lb dried rigatoni
- 1 Qt heavy cream
- 2 Tbsp chopped fresh rosemary
- 1 clove fresh garlic, crushed
- 8 Oz goat cheese
- 2 C shredded roasted chicken
- salt and pepper to taste
Lemon-Maple Squash

Curried Chicken Salad

- Dressing:
- 4 skinless chicken breasts - cooked, cubed and cooled
- 6-8 stalks celery (usually from the heart), diced
- 1-2 bunches green onions, chopped
- 1 bag Craisins
- 1/2 C slivered almonds (can use cashews or pistachios)
- 1 1/2 -2 C mayonaisse
- 1/4 C red wine vinegar (more to your taste)
- 1-2 Tbsp curry powder (again to your taste)
- salt and pepper to taste
- 1 packet sugar or Splenda
