Roasted Squash Toss

Preheat oven to 425o. In a large bowl, mix together garlic, olive oil, sugar, cumin, chili flakes, and cinnamon
- 2 cloves garlic, minced
- 1/4 C EVOO
- 2 Tbsp dark brown sugar
- 2 Tsp ground cumin
- 2 Tsp red chili flakes
- 1 Tsp cinnamon
- Kosher salt
- Freshly ground black pepper
- 1 (2 lb) butternut squash, peeled, seeded and cut into 1/2" cubes
- 1 (1 1/2 lb) acorn squash, seeded and cut into 1/2" cubes
- 1/2 C almond sliver
- 1/2 orange, zested and juiced (about 1/3 C juice & 1 Tbsp zest)
Southwestern Stuffed Peppers

Preheat oven to 425F. Arrange peppers cut side down in baking dish
- 4 medium peppers, halved and seeded
- 1 box (6.2 oz) zesty Southwestern rice mix
- 8 oz Cheddar cheese (1 1/2 c diced & 1/2 C shredded)
Baked Cabbage

- 1 Tsp EVOO
- 2 Tbsp real bacon bits
- 2 Tbsp lemon juice
- 1 Tbsp worcestershire sauce
- 1/2 Tsp kosher salt
- 1/4 Tsp ground black pepper
- 1 Med head of cabbage
Veggie Soup

Cut up onions, celery, carrots, garlic and saute in 1-2 Tbsp EVOO or canola oil
- Vegetables:
- 1 Lg bottle V8
- 1 8oz can tomato sauce
- 1 Sm can tomato paste
- 1 can stewed tomatoes (garlic seasoned is optional)
- 1/2 head cabbage (chopped)
- 1 Stalk celery (hearts are best)
- 1 Lg yellow onion
- 3 cloves garlic
- 2 Bay Leaves
- 1 Tsp Oregano
- 2 Tsp ground Pepper (garlic or lemon pepper is an option)
- 1 Tbsp Salt or Mrs Dash
- 1 C Instant Rice or Sm Pasta (Orzo or baby shells are good)
- Your choice, everybody has favorites. I use carrots, squash, green beans, mushrooms , red potatoes
Peach Salsa

Drain peaches. Chop peaches, tomatoes and green onions; place in a large bowl
- 1 (16 oz) can peaches in juice
- 4 plum tomatoes
- 4 green onions
- 2 Tbsp chopped pickled Jalapeno peppers
- 1 Tbsp finely chopped fresh cilantro
- 1 Tbsp olive oil
- 1 Tbsp lime juice
- 1 Tsp honey
- 1/4 Tsp salt
- 1/4 Tsp pepper
Frozen Fruit Salad

Yields 24 servings
- 1 can cherry pie filling
- 1 (20oz) can of crushed pineapple, drained
- 1 can sweetened condensed milk
- 1 (8oz) carton of cool whip
- 1/4 C lemon juice
- 1 C chopped pecans (optional)
Spaghetti Squash with Brown Butter & Parmesan

Place the whole squash in a large pot and add water to cover
- 1 spaghetti squash (2 1/2 - 3 Lbs)
- 4 Tbsp (1/2 stick) unsalted butter
- Pinch of freshly grated nutmeg
- 1/3 C grated Parmesan-Reggiano cheese
- Salt and freshly ground black pepper, to taste
Artichoke & Potato Au Gratin

Heat the oven to 350o. grease a 15" x 11" baking dish with butter
- 2 C grated Parmesan Cheese
- 3 C grated Gruyere Cheese
- 3 Lbs Yukon Gold potatoes, thinly sliced (1/8") divided
- Salt
- Pepper
- 2 Cloves Garlic, minced
- 6 C drained marinated Artichoke Hearts
- 1 Qt Heavy Cream, divided
Sauteed Carrots

Peel the carrots and cut them diagonally in 1/4" slices
- 2 Lbs carrots
- 1 Tsp kosher salt
- 1/4 Tsp freshly ground pepper
- 2 Tbsp unsalted butter
- 1 1/2 Tbsp chopped fresh dill or flat-leaf parsley
Lemon Drizzle Cake

Preheat the oven and preheat to 350˚F and butter a 12 x 9 x 1 ½-inch baking pan (I used a 9 x 9)
- 1 cup (2 sticks) unsalted butter, cubed
- 1 cup granulated sugar
- 3 medium eggs
- 2/3 cup milk
- 1 2/3 cups self-rising flour, sifted (or 1 2/3 cups all-purpose flour, 2 1/2 teaspoons baking powder and 3/4 teaspoon salt)
- 1 1/2 teaspoons baking powder, sifted
- Finely grated zest and juice of 2 lemons
- 1 cup granulated sugar
