Preheat oven to 425o. In a large bowl, mix together garlic, olive oil, sugar, cumin, chili flakes, and cinnamon

  • 2 cloves garlic, minced
  • 1/4 C EVOO
  • 2 Tbsp dark brown sugar
  • 2 Tsp ground cumin
  • 2 Tsp red chili flakes
  • 1 Tsp cinnamon
  • Kosher salt
  • Freshly ground black pepper
  • 1 (2 lb) butternut squash, peeled, seeded and cut into 1/2" cubes
  • 1 (1 1/2 lb) acorn squash, seeded and cut into 1/2" cubes
  • 1/2 C almond sliver
  • 1/2 orange, zested and juiced (about 1/3 C juice & 1 Tbsp zest)

Cut up onions, celery, carrots, garlic and saute in 1-2 Tbsp EVOO or canola oil

  • Vegetables:
  • 1 Lg bottle V8
  • 1 8oz can tomato sauce
  • 1 Sm can tomato paste
  • 1 can stewed tomatoes (garlic seasoned is optional)
  • 1/2 head cabbage (chopped)
  • 1 Stalk celery (hearts are best)
  • 1 Lg yellow onion
  • 3 cloves garlic
  • 2 Bay Leaves
  • 1 Tsp Oregano
  • 2 Tsp ground Pepper (garlic or lemon pepper is an option)
  • 1 Tbsp Salt or Mrs Dash
  • 1 C Instant Rice or Sm Pasta (Orzo or baby shells are good)
  • Your choice, everybody has favorites. I use carrots, squash, green beans, mushrooms , red potatoes
