- 3 C fresh blackberries
- 3 C yogurt cheese (or Greek yogurt)
- 1 can sweetened condensed milk

- 3-4 leaves fresh sage, finely chopped

- 14.5 Oz can low sodium chicken broth
- 4 C cubed stale rosemary foccacia
- 2 Large eggs, lightly beaten
- 3/4 C lightly toasted pistachios, roughly chopped

Preheat oven to 350 degrees In a large non-stick sauté pan over medium-high heat, warm the EVOO
- 1 Tbsp EVOO
- 1 yellow onion, cut into 1/2"dice
- Kosher salt and freshly ground pepper, to taste
- 1 1/4 Lb boneless skinless chicken breast, cooked and shredded
- 1 3/4 C red enchilada sauce
- 9 corn tortillas, each about 6" in diameter
- 3/4 C shredded white cheddar cheese
- 3/4 C shredded mozzarella cheese
- 3/4 C shredded yellow cheddar cheese
- Sliced green onion tops for garnish
- Chopped fresh cilantro for garnish
Honey Lime Tilapia

- 1 Tbsp slivered green olives
- 2 scallions, white and tender green parts, thinly sliced
- 1 Tbsp chopped fresh basil
- 1 Tbls sherry vinegar
- 2 Tbsp EVOO
Roasted Butternut Squash

- 1/4 C EVOO
- 3 cloves garlic, minced
- 2 Tbsp chopped fresh sage leaves

Preheat oven to 400o. Grease an 11" x 17" baking sheet with olive oil
- 1/3 C EVOO
- 3 medium carrots (about 3/4 lb), cut into 1 1/2" circles
- 1 1/2 C Brussel sprouts (about 1/2 lb), halved
- 4 C red bliss potatoes (about 1 lb), cut into 1 1/2" slices
- 3 medium parsnips (about 1 lb), cut into 1 1/2" slices
- 1 C sweet potatoes (abount 1 lb), cut into 1 1/2" slices
- 1 Tbsp dried oregano
- 1 Tbsp dried rosemary
- 1 Tsp dried thyme
- 1 Tsp dried basil
- 1/4 Tsp sea salt
