Taco Meatball Ring
By june
In a large bowl, combine 1 cup cheese, water and taco seasoning
- 2 cups (8 oz) shredded cheddar cheese, divided
- 2 tbsp water
- 2 to 4 tbsp taco seasoning
- 1/2 lb ground beef
- 2 tubes (8 oz each) refrigerated crescent rolls
- 1/2 medium head iceberg lettuce, shredded
- 1 medium tomato, chopped
- 4 green onions, sliced
- 1/2 cup sliced ripe olives
- 2 jalapeno peppers, sliced
- sour cream and salsa, optional
Clear Orange Filling
By june
Bring above ingredients to a rolling boil and boil 1 minute, stirring constantly
- 1 cup sugar
- 4 tbsp cornstarch
- 1/2 tsp salt
- 1 cup orange juice
- 2 tbsp grated orange rind
- 1 1/2 tbsp lemon juice
- 2 tbsp butter.
Kung Pao Pork with Peanuts and Scallions

Prepare the marinade. Add the pork, stirring to coat well
- Marinade (recipe follows)
- 1 1/4 lbs pork tenderloin, cut into 1-inch chunks
- 1/2 cup water
- 1 tbsp low-sodium soy sauce
- 1 tbsp rice or cider vinegar
- 1 tbsp red wine vinegar
- 1 tbsp sugar
- 1 tbsp grated fresh ginger
- 1 tbsp toasted sesame oil
- 1 tbsp cornstarch
- 1/2 tsp red pepper flakes
- 3 cloves garlic, minced
- Hot sauce, to taste
- 8 oz udon noodles, or cooked rice
- 1/2 cup roasted shelled peanuts
- 6 scallions, chopped
Chunky Apple Cake with Cream Cheese Frosting

Mix together first 4 ingredients in a large bowl until blended
- Cream Cheese Frosting:
- 1/2 cup butter, melted
- 2 cups sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp ground cinnamon
- 4 Granny Smith apples, peeled and diced
- 1 cup chopped walnuts, toasted
- 2 (8 oz) pkgs cream cheese, softened
- 6 tbsp butter or margarine, softened
- 3 cups powdered sugar
- 1/4 tsp salt
- 2 tsp vanilla extract
- Chopped walnuts, toasted (optional)
Pork Piccata

Season both sides of pork with salt and pepper
- 8 thin boneless pork cutlets (about 1 1/2 to 2 lbs total)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/3 cup all-purpose flour
- 2 tbsp olive oil
- 1 cup chicken broth
- 3 tbsp capers
- 2 tbsp lemon juice
- 1 tbsp butter

In a large skillet, cook the bacon over medium heat until crisp
- 1/2 lb sliced bacon
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 12 eggs
- 1 cup milk
- 1 pkg (16 ozs) frozen shredded hash brown potatoes, thawed
- 1 cup (4 ozs) shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp pepper

- Juice of 1 lime
- Freshly ground pepper
- 1 1/2 lbs skinless, boneless chicken breasts (about 3 medium)
- For the vegetables:
- 1/4 cup seasoned rice vinegar
- 1 tbsp toasted sesame oil
- 2 tsp honey
- Kosher salt
- 2 carrots, cut into matchsticks
- 3 to 4 radishes, thinly sliced
- 2 jalapeno peppers, thinly sliced
- For the tacos:
- Vegetable oil, for brushing
- 1/3 cup hoisin sauce
- 1/2 cup sour cream
- Juice of 1 lime, plus wedges for serving
- 2 tsp Sriracha
