- 1 8-ounce package dried pitted dates, chopped into 1/2-inch pieces
- 2 teaspoons baking soda
- 3/4 cup boiling water
- 1 stick unsalted butter, softened
- 1 cup plus 2 tablespoons granulated sugar
- 3 jumbo eggs, at room temperature
- 1 3/4 cup self-rising flour
- 3 tablespoons sugar in the raw (turbinado sugar)
- BOURBON SAUCE:
- 2 cups heavy cream
- 1/2 cup granulated sugar, divided
- 1 vanilla bean, split
- 4 jumbo eggs
- 1 teaspoon vanilla extract
- 2 tablespoons good bourbon
- TOFFEE SAUCE:
- 1 stick unsalted butter
- 1 pound brown sugar
- 2 cups heavy cream
- 2 tablespoons good bourbon
- 1 tablespoon vanilla extract
- SPICED PECANS:
- 1 pound pecan halves
- 2 teaspoons water
- 3/4 cup maple syrup
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- WHIPPED CREAM:
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract

Preheat oven to 350 degrees
- 2 (8 oz) pkgs cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 (8 oz) cans refrigerated crescent roll dough
- 3/4 cup granulated sugar
- 1/2 cup butter, softened
- 1 1/2 tsp ground cinnamon
- Confectioners' sugar, optional
Chicken With Black Bean Sauce

Heat 1 tbsp oil in a large nonstick skillet over medium-high heat
- 1 1/2 tbsp vegetable oil
- 1 cup fresh orange juice
- 1/4 cup black bean sauce
- 1 tbsp low-sodium soy sauce
- 2 tsp sugar
- 1 tsp cornstarch
- 1 tsp bottled minced garlic
- 1/4 tsp black pepper
- 1 lb skinless, boneless chicken breast cutlets
- 1/4 tsp salt
- 1/2 cup panko (Japanese) breadcrumbs
Oven-Fried Pork Chops

Preheat oven to 425 degrees
- 1/2 cup all-purpose baking mix, Bisquick
- 1/2 cup Italian-style panko
- 1/4 cup all-purpose flour
- 2 large eggs, lightly beaten
- 4 boneless, center-cut pork chops

- 1/4 tsp ground black pepper

- 1 cup buttermilk

- 1 small cantaloupe, cubed*
- 3 1/2 cups honeydew, cubed*
- 2 cups fresh strawberries, halved*
- 2 cups fresh blueberries*
- 2 cups seedless grapes*
- 2 medium firm bananas, sliced*
Roasted Chicken Lasagna with Ricotta and Spinach

In a medium bowl, combine ricotta, cottage cheese, spinach, egg, oregano and black pepper
- 1 cup light (5%) ricotta cheese
- 1 cup low-fat (1%) cottage cheese
- 1/2 pkg (5 oz) frozen spinach, thawed, squeezed dry and chopped
- 1 egg
- 1/2 tsp dried oregano
- 1/8 tsp freshly ground black pepper
- 12 uncooked lasagna noodles
- 1 small fully cooked rotisserie chicken
- 4 cups chunky vegetable pasta sauce
- 1 cup crumbled light feta cheese (4 oz)
- 1 1/2 cups packed shredded light mozzarella cheese (6 oz)
- 1/4 cup chopped black olives
- 2 tbsp chopped fresh parsley (optional)
White Almond Sour Cream Cake (aka Traditional New Orleans Wedding Cake)

- Cake:
- 5 egg whites
- 1 cup of sour cream, divided use
- 1 1/2 tsp vanilla extract
- 1 1/2 tsp almond extract
- 1/4 cup cornstarch
- 2 cups cake flour
- 3/4 cup all-purpose flour
- 2 tbsp baking powder
- 1 tsp salt
- 1 3/4 cups granulated sugar
- 1 cup unsalted butter, room temperature, more for greasing pans
- Frosting:
- 1 1/2 cups unsalted butter, room temperature
- 5-6 cups powdered sugar
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1-2 tsp almond extract, to taste
- 4-5 tbsp half and half or whipping cream, until it reaches desired consistency.

In a bowl, combine first seven ingredients and mix well
- 1 1/2 lbs ground beef
- 1 can (5 oz) evaporated milk
- 1 egg, lightly beaten
- 3/4 cup quick-cooking oats
- 1/4 cup chopped onion
- 1 tsp salt
- 1/4 tsp pepper
- 1 cup ketchup
- 3 tbsp brown sugar
- 3 tbsp prepared mustard

- 1 tbsp salted butter
- 1 large Gala or Granny Smith apple, peeled and chopped finely

- 1 tsp baking soda
- 1/2 cup (1 stick) cold salted butter, cut into chunks
- 1 cup Greek vanilla yogurt (choose a creamy variety-nonfat is fine)
- Caramel Icing:
- 4 tbsp salted butter
- 1/2 cup packed light brown sugar
- 2 tbsp milk
- 1/4 tsp vanilla extract
- 1/2 to 3/4 cup sifted powdered sugar
