Ingredients

  • 4 pounds pork loin country style ribs, cut to serve pieces
  • 1/3 cup flour
  • 2 tablespoons oil
  • 1 1/2 cups apple juice
  • 1 tablespoon salt
  • 1/2 tablespoon pepper
  • 2 pounds small red peppers
  • 1 bag carrots 16oz, cut into 2" pieces
  • 1 pound small whole onions
  • 1 head cabbage, shredded

ABOUT 2 1/2 hours before serving; on waxed paper, coat pork loin ribs with flour.

IN an 8 quart dutch oven over medium high heat, cook meat a few pieces at a time in oil until well browned on all sides, removing pieces as they brown.

REDUCE heat to medium. Into drippings in dutch oven, stir in apple juice. return meat to dutch oven, add salt and pepper; heat to boiling.

COVER dutch oven and bake in 350 oven for 30 minutes. Add potatoes, carrots and onions; cover; bake 30 minutes more. Skim off fat from liquid in dutch oven. Add cabbage; cover and bake 1 hour longer or until vegetables and meat are tender.
