Kiwi, Goat Cheese, and Toasted Pecan Salad

Ingredients

  • 8 kiwis peeled and cubed
  • 1/4 c EVOO
  • 1 T white balsamic vinegar
  • salt and pepper
  • 10 oz field greens
  • 4 oz goat cheese, crumbled
  • 1/2 c toasted pecans

Preparation

Step 1

Mash 1/2 c cubed kiwis with fork; press pulp through a fine mesh sieve set over a bowl to extract 2 T juice. Whisk in EVOO, vinegar and 1/4 t each of salt and pepper.

Place greens in bolw and toss with dressing; divide among plates and top with remaining kiwi cubes, cheese and pecans.
