Carrot Cake

Easy Chicken Chilaquiles Skillet

IN medium bowl, combine chicken and garlic salt; toss to coat
- 1 pound boneless skinless chicken breast halves, cut into 3/4 pieces
- 1/2 teaspoon garlic salt
- 1 can diced tomatoes with green chiles 14.5oz, undrained
- 1 can spicy chili beans 15oz
- 1 1/2 cups frozen gold and white corn
- 1/2 cup water
- 2 cups tortilla chips, broken up
- 1 cup shredded Mexican cheese blend
Buttermilk Basil Salad Dressing

Old Fashioned Beans

Preheat oven to 350 when ready to bake
- 2 lbs dried navy beans
- 1/2 lb cubed salt pork or cubed pork
- 1 med onion cut into quarters
- 1/2 c brown sugar
- 1 c maple syrup
- 2 t dry mustard

- 2 t salt
- 2 c boiling water
Apple Cobbler

IN a large bowl, combine the sugar, cornstartch, cinnamon and nutmeg

- 1 tablespoon cornstarch
- 1/2 teaspoon cinnamon

- 1/2 cup fat free milk
Spicy Black Bean Soup and Tortillas

This hearty bowl of soup has only 240 calories per 1 1/2 cup serving
- 1 1/2 cups dried black beans
- 1 cup chopped yellow onion
- 1/2 lb chopped red potatoes
- 1 cup salsa
- 2 cloves minced garlic
- 1/2 tsp sea salt
- 1/8 tsp black pepper
- 6 Tbsp shredded four cheese blend
- 6 Tbsp low fat plain yogurt (optional)

Chicken Tetrazzini

HEAT oven to 350. Boil water and cook noodles
- 2 quarts water
- 2 teaspoons salt
- 1 tablespoon oil
- 1/2 package long spaghetti 16 oz
- 2 cups sliced fresh mushrooms
- 1/4 cup butter or margarine
- 3 tablespoons flour
- 2 cups chicken broth
- 3/4 cup light cream
- 3 tablespoons sherry if desired
- 1 tablespoon chopped fresh parsley
- 1 teaspoon salt

- 3 cups cooked chicken or turkey, cubed
