Ingredients

  • extra virgin olive oil
  • 3 lbs top round in one big hunk
  • kosher salt and freshly ground black pepper
  • 1 onion sliced
  • 2 fresh rosemary sprigs
  • 3 fresh thyme sprigs
  • 1/2 bottle dry red wine
  • 2 c beef broth
  • 2 bay leaves

Step 1

Preheat oven to 350. Olive oil in an oven proof dutch oven over med high heat until smoking. Season meat well with salt and pepper and put in the pan making sure to sear on all sides. 10-12 min. Take the meat out and set aside.
Add the onion, rosemary, thyme to the pan and cook for about 5 min. now add the wine, broth and bay leaves and bring to a simmer. Return the meat to the pan, cover and put the pan in the oven. Cook until the meat is fork tender about 2 1/2 hours.
Remove the meat to a platter and taste liquid for salt and pepper and remove the bay leaves. serve on top of a big heap of mashed potatoes.
