Sauteed Pear Salad

- 1 T olive oil
- 2 firm ripe pears, cored, peeled and cut into slices
- 1 T honey
- 8 c salad greens rinsed and chilled
- 1/2 c each thinly sliced cucumber, carrots, and red bell peppers
- 4 oz feta or goat cheese
- 1 c chopped roasted or glazed almond pieces if tolerated
- 1/3 c olive oil
- 3 T pear juice
- 1 T honey
- 1 t vanilla extract
- salt and pepper to taste
Maple Syrup Cornbread

- 1 1/8 c cornmeal
- 1 1/8 c whole wheat flour
- 3 t baking powder
- 1/2 t salt
- 1 egg well beaten
- 1/2 c maple syrup
- 3/4 c milk
- 3 T melted shortening
Pina Colada Monkey Bread

Heat oven to 350. Grease a 12 c bundt pan with cooking spray
- 1/2 c butter
- 1/4 c plus 3 T coconut milk, divided
- 2 cans (16.3 oz ea) Pillsbury Grand refrigerated biscuits
- 1 1/4 c granulated sugar
- 1 can (20 oz) crushed pineapple, well drained
- 1 c powdered sugar
Blueberry Pudding Cake

TOSS the blueberries with cinnamon and lemon juice; place in a greased 8 inch square baking dish
- 2 cups fresh or frozen blueberries
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 cup flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/2 cup milk
- 3 tablespoons butter or margarine
- Topping
- 3/4 cup sugar
- 1 tablespoon cornstarch
- 1 cup boiling water
Spicey Maple Cashew Popcorn

Heat canola oil in a med heavy saucepan over med high heat
- 1 T canola oil
- 1/4 c unpopped kernels (about 6 c popped)
- 1/4 c dry roasted cashews
- 1/3 c sugar
- 1/3 c maple syrup
- 1 T butter
- 1/2 t salt
- 1/4 t ground red pepper
Parmesan Garlic Baked Potatoes

Preheat oven to 425. Melt 4 T butter in a 5x9 baking dish
- 2 med russet potatoes
- 4 T butter
- 1 1/2 mix of salt, pepper and garlic
- 1/2 c grated Parmesan cheese(fresh if possible)

- 1/4 c quaker oats uncooked
- 3 T whole wheat flour
- 2 T sugar
- 1/4 t cinnamon
- 1 t butter

- 3 T + 1/2 c sugar, divided
- 1 T cinnamon
- 1 c quaker oats uncooked
- 1 c low fat buttermilk
- 1 egg well beaten
- 1/4 c canola oil
- 1/2 c whole wheat flour
- 1/2 c all purpose flour
- 1/4 c original toasted wheat germ
- 1 1/2 t baking powder
- 1/2 t baking soda
Apple Pie Crescent Rolls

Preheat oven to 350 and line a baking sheet with parchment paper
- 1 apple, washed and cut into 8 wedges. No seeds.
- 1/4 c light brown sugar
- 3 T unsalted butter, melted and divided
- 1 T ground cinnamon

- Homemade caramel sauce or your favorite store brand
Roasted Rosemary Parmesan Potatoes
