Baked Rice Pudding II

In bowl, beat eggs slightly with sugar and salt
- 3 eggs
- 1/3 c sugar
- 1/4 t salt
- 2 c milk
- 2 c cooked rice
- 1/2 c golden raisins
- grated peel of 1 lemon
- warm lemon sauce below
- Warm lemon sauce
- 1/3 c sugar
- 2 T cornstarch
- 1/8 t salt
- dash nutmeg (optional)
- 3/4 c water
- grated peel of 1 lemon
- juice of 1 lemon
- 1 T butter or margarine
- few drops yellow food coloring (optional)
Sweet and Sour Chicken

Great instead of take out
- 2 Tbs unseasoned rice vinegar
- 3 cloves garlic, minced
- 2 Tbs reduced sodium soy sauce
- 1/2 tsp minced fresh ginger
- 1/4 tsp red pepper flakes (optional)
- 6 oz boneless, skinless chicken breasts
- 1 tsp vegetable oil
- 1 lg green pepper cut to 1 in squares
- 3 green onions, chopped
- 1 Tbs cornstarch
- 1/2 cup fat free reduced sodium chicken
- broth
- 2 Tbs apricot fruit spread
- 1 can (11oz) mandarin ornages, drained
- 2 cups hot cooked rice
Peach Muffins

Preheat the oven to 350 degrees F
- Nonstick cooking spray
- 2 cups self-rising flour
- 1 cup (2 sticks) unsalted butter, melted
- 1 cup sour cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 (15-ounce) can sliced peaches, drained and chopped into 1/4-inch pieces
Asian Pork with Mushrooms Crock Pot (Skinnytaste)

Season pork on all side with salt and fresh cracked pepper
- For topping:
- 2 lb lean boneless pork sirloin roast (aka pork center rib roast, pork center loin roast)
- kosher salt and fresh cracked pepper
- Non-stick oil spray (I used Smart Balance spray)
- 1 cup low-sodium fat-free chicken broth
- 1/2 cup reduced-sodium soy sauce (for gf use gf tamari)
- 1/3 cup balsamic vinegar
- 3 tbsp agave (or sugar)
- 1 tsp hot sesame oil (aji oil) (or use sesame oil + pinch red pepper flakes)
- 1/2 tsp Chinese five spice (I used McCormick)
- 3 cloves crushed garlic
- 1 tbsp fresh grated ginger root
- 8 oz sliced mushrooms (I used baby bella)
- 1/4 cup chopped scallions
- 1/4 cup chopped cilantro
Sticky Cinnamon Rolls

IN a small bowl, combine sugar and cream
- 1 1/4 cups sugar
- 1/2 cup whipping cream
- 1 cup coarsely chopped pecans
- 2 loaves frozen white bread dough (1lb ea), thawed
- 3 tablespoons butter or margarine, melted
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 3/4 cup raisins, optional
Sirloin Roast with Gravy (skinny)

Rub roast with pepper and garlic
- 3 lb beef sirloin tip roast
- 1 to 2 t coarsley ground pepper
- 1 1/2 t minced garlic
- 1/4 c reduced sodium soy sauce
- 3 T balsamic vinegar
- 1 T worcestershire
- 2 t ground mustard
- 2 T cornstarch
- 1/4 c cold water
Awesome Bow Tie Pasta

Bring a large pot of lightly salted water to a boil
- 16 oz pkg of bow tie pasta
- 2 green onions, chopped
- 6 oz pkg feta cheese, crumbled
- 1/2 c balsamic vinegar
- 1/4 c virgin olive oil
- 2 c chopped fresh tomato
Pasta Carbonara with Corn and Chiles

Cook the pasta until al dente
- salt
- 1 lb egg fettuccine pasta
- 3 T EVOO
- 1/4-1/3 lb pancetta, finely diced
- 1 1/2 -2 c frozen or canned corn
- 2 small fresno or italian cherry chile peppers seeded and finely chopped
- 6 garlic cloves finely chopped
- 2 T chopped fresh thyme
- 1/2 c finely chopped flat leaf parsley
- 1/2 c dry white wine
- 3 extra large egg yolks, beaten
- 1/2 c each grated parmigianoireggiano and pecorino romano cheese
- handful of chives snipped into one inch pieces
Roast Beef Horseradish Spirals

Combine first 6 ingredients
- 8 oz pkg cream cheese
- 2 green onions, chopped about 1/2 c
- 1/4 c chopped fresh parsley
- 2 T horseradish
- 1/4 t salt
- 1/4 t garlic powder
- 8 oz deli roast beef, sliced
- 2 10inch tortillas, cheese flavored are nice
