Tyler's Ultimate Mac and Cheese

This is my second favorite after my four cheese recipe!! This is awesome!
- Kosher salt
- 1 pound elbow macaroni
- 4 cups milk
- 2 or 3 sprigs thyme
- 4 cloves garlic, smashed and divided
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 5 1/2 cups shredded sharp white Cheddar
- Freshly ground black pepper
- 1/4 cup chopped flat-leaf parsley
- 4 slices bacon, cut crosswise into thin strips
- 1 large onion, diced
- 2 garlic cloves, smashed
- Leaves from 1/4 bunch fresh thyme
Cheesy Beffy Stuffed Shells

Preheat oven to 350. Cook the pasta in boiling water for about 1 min less than pkg suggests
- 1/2 lb jumbo pasta shells
- 2 T olive oil
- 1 small onion finely chopped
- salt and pepper
- 3 garlic cloves minced
- 1 lb ground beef
- 2 T Italian herbs
- 2 c spaghetti sauce
- 2 c ricotta or cottage cheese
- 1 c shredded mozzarella plus more for topping
- 1/2 c pamesan grated plus more for topping
- 1 large egg beaten
French Onion Beef Noodle Bake

1. Heat oven to 350. Cook and drain noodles as directed on package
- 5 cups uncooked wide noodles (8oz)
- 3 tablespoons butter or margarine
- 2 pounds boneless beef sirloin steak, cut into 1" cubes
- 4 medium onions, thinly sliced
- 2 cups fresh mushroom, sliced
- 3 cups beef broth
- 1/4 cup flour
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups seasoned croutons
- 2 cups shredded Swiss cheese
Apple Orchard Pork Chops

Heat oil in large skillet
- 6 Armour pork loin chops, cut 1-1/2-inch thick
- 2 teaspoons vegetable oil
- 2 cups apple cider
- OR
- 2 cups apple juice
- 1/3 cup Viennese or German-style mustard
- 3 apples, unpared, cored, and sliced 1/2-inch-thick
- 1/2 cup currants
- OR
- 1/2 cup raisins
- 1/2 cup sliced green onions
- 2 tablespoons cornstarch
- 1/4 cup water
Dry Marinades for Grilled Meat

- Basic Rub (3 steaks)
- 2 t black pepper
- 1 1/2 t onion salt
- 1 t brown sugar
- 1/4 t garlic powder
- Indonesian Style (2 steaks)
- 1 1/2 t onion salt
- 12 t finely minced garlic
- 1/2 t cinnamon
- 1/2 t coriander
- 1/4 t thyme
- 1/2 t ginger
- 2 t sugar
- Oriental Blend (3 chicken breasts)

Peach Upside Down Cake

Line a9x13 pan with parchment paper and spray with Pam
- 1 box classic yellow cake mix
- eggs, butter, and water according to box mix
- 1 small box vanilla pudding
- 1 bag frozen peaches
- 1 T sugar
- 1/2 t cinnamon
- 1/4 t nutmeg
Creamy Chicken Enchiladas (Skinny)

Preheat oven to 350. Spray 13x9 dish with PAM
- 1 T olive oil
- 1/2 T butter
- 1/2 yellow onion diced
- 3 garlic cloves minced
- 1/2 t garlic powder
- 3/4 t salt
- 1/2 t ground cumin
- 1/2 t ground coriander
- 3 1/2 T flour
- 2 1/2 c chicken stock, hot
- 6 oz non fat greek yogurt
- 3 c cooked chicken shredded
- 7 oz diced green chilies, mild
- 8-10 whole wheat flour tortillas
- 1 c low fat mozzarells cheese shredded
- sliced olives
- chopped tomatoes if desired
Rolled Rib Roast

TRIM excess fat from meat
- 4 pounds rolled rib roast
- salt and pepper
- 2 tablespoons red wine
- 2 tablespoons water
- 2 tablespoons flour
- extra water
Cheddar Baked Potato Slices

IN small bowl, combine soup, paprika, salt and pepper
- 1 can cream of mushroom soup
- 1/2 teaspoon paprika
- 1/2 teaspoon pepper
- 4 medium potatoes, cut in 1/4" slices
- 1 cup cheddar cheese, shredded
Spaghetti with Shrimp Butter Sauce

1. In medium skillet, combine butter, lemon juice, garlic, oregano, pepper and hot pepper sauce
- 1/3 cup butter or margarine
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/4 teaspoon oregano, crushed
- 1/8 teaspoon black pepper
- 1/8 teaspoon bottled hot pepper sauce
- 8 ounces Alaska pink shrimp (about 1-2/3 cups)
- 1/3 cup minced parsley
- 6 ounces spaghetti, cooked and drained
- Grated Parmesan cheese, optional
