Homey Mac and Cheese

Preheat oven to 350. Cook macaroni according to package directions for al dente
- 2 1/2 c uncooked elbow macaroni
- 1/4 c butter, cubed
- 1/4 c all purpose flour
- 1/2 t salt
- 1/4 t pepper
- 3 c 2% milk
- 20 oz or 5 c shredded sharp cheddar cheese, divided
- 2 T Worcestershire sauce
- 1/2 t paprika
Fudgy Cappuccino Crinkles

Lightly grease cookie sheet; set aside
- 1/3 c butter, softened
- 1 c brown sugar
- 2/3 c unsweetened cocoa powder
- 1 T instant coffee granules
- 1 t baking soda
- 1 t ground cinnamon
- 2 egg whites
- 1/3 c vanilla low fat yogurt
- 1 1/2 c flour
- 1/4 to 1/2 c granulated sugar or sifted powdered sugar
Peanut Butter Kisses

HEAT oven to 375. Place sheets of foil on countertop for cooling cookies
- 1 1/4 cups firmly packed brown sugar
- 3/4 cup creamy peanut butter
- 1/2 cup Crisco shortening
- 3 tablespoons milk
- 1 tablespoon vanilla
- 1 each egg
- 1 3/4 cups flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 48 each chocolate kisses
Spicy Orange Beef

In a wok or skillet, heat oil over med high heat
- 2 T veg oil
- 1 lb round steak, cut into thin strips on the diagonal
- 1/4 c orange peel, cut into slivers
- 1 clove garlic, minced
- 1/2 t ground ginger
- 2 T cornstarch
- 1 c beef broth
- 1/4 c soy sauce
- 1/4 c cherry
- 1/4 c orange marmalade
- 1/2 t crushed red pepper flakes
Zippy Beef Biscuit Casserole

HEAT oven to 375. In large skillet brown the beef and chopped onion
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/4 cup diced green chiles
- 1 can 8oz tomato sauce
- 2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1 can Pillsbury biscuits
- 1 each egg, beaten
- 1 1/2 cups Monterey jack cheese, shredded
- paprika
French Apple Bread Pudding

Preheat oven to 350. Combine bread cubes and raisins in buttered 9inch square pan
- 4 c cubed French bread
- 1/2 c raisins (optional)
- 3 eggs
- 1 can sweetened condensed milk
- 3 med apples, peeled, cored, and finely chopped
- 1 3/4 c hot water
- 1/4 c butter or margarine, melted
- 1 t ground cinnamon
- 1 t vanilla extract
Hash Brown Casserole (light)

- 2 teaspoons olive oil
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 medium zucchini, cut into thin strips
- 2 tablespoons all-purpose flour
- 2 cups fat-free milk
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- Pinch ground nutmeg
- 1 (20-ounce) package refrigerated shredded hash browns (we used Simply Potatoes™)
- 2/3 cup reduced-fat shredded Cheddar cheese
- 6 multi-grain club crackers, coarsely crushed
- 2 teaspoons melted butter
Cheesy Chicken and Broccoli Bake

Preheat oven to 400. Prepare stuffing mix as directed on package
- 1 pkg (6oz) stove top stuffing mix for chicken
- 1 1/2 lb boneless, skinless, chicken breasts cut into 1 inch pieces
- 1 pkg (16oz) frozen broccoli florets, thawed and drained
- 1 can reduced sodium cream of chicken soup
- 1/2 lb velveeta cheese cut into 1/2 inch cubes
Fried German Potato Salad
