Mock Sour Cream

- 1 c cottage cheese
- 1 T lemon juice
- 1/4 c milk
Fried Brown Rice with Asian Vegetables

As easy as take out
- 1 cup water
- 1/2 tsp salt, divided
- 1 cup uncooked instant brown rice
- 2 1/2 Tbs canola or veg oil, divided
- 2 cups frozen Asian mixed vegetables
- (about 8 oz)
- 1 clove garlic, minced
- 4 eggs
- 1/8 tsp black pepper
- 1/4 cup minced green onions
- 2 to 3 tsp soy sauce
Pecan Crusted Chicken Nuggets

Preheat oven to 400. Place cornflakes, parsley and garlic powder in a blender and ground finely
- 1 1/2 c cornflakes
- 1 T dried parsley flakes
- 1/2 t garlic powder
- 1/2 c Panko bread crumbs
- 1/2 c finely chopped pecans
- 3 T 2%milk
- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1 in pieces
- 1/2 t salt
- 1/4 t pepper

Jennifer's Buttermilk Pie

- 1-9 in pie crust
- 1 1/2 c sugar
- 3 T flour
- 1 c buttermilk
- 1 T fresh squeezed lemon juice
- 2 T vanilla extract
- 2 large eggs
- 1/2 c unsalted butter, melted and cooled to room temp
Cobb Macaroni Salad

1. Boil macaroni in a large pot of salted water according to package directions
- 1 pound macaroni
- 1 pint grape tomatoes, halved
- 6 ounces blue cheese, crumbled
- 3 hard-boiled eggs, roughly chopped
- 1 ripe avocado, diced
- 6 slices cooked bacon, crumbled
- 1/2 cup chives, finely chopped
- 1/2 cup mayonnaise
- salt and freshly ground black pepper, to taste
Cantonese Pork

CUT tenderloins in half lengthwise, then crosswise into 1/4 inch slices
- 2 pounds pork tenderloin
- 1 tablespoon oil
- 1 can pineapple chunks (8oz), undrained
- 2 cans sliced mushrooms (4oz ea), drained
- 1 medium onion, thinly sliced
- 3 tablespoons brown sugar
- 2 tablespoons worcestershire sauce
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons white vinegar
- 1 can tomato sauce(8oz)

COOK potatoes until tender; drain
- 4 large potatoes, peeled and quartered
- 1/4 cup milk
- 1/2 teaspoon salt
- 2 tablespoons butter or margarine, melted and divided
- 1 each egg, beaten
- 1 cup sour cream
- 1 cup small curd cottage cheese
- 5 each green onions, finely chopped
- 1/2 cup crushed butter flavored crackers
Emily's Famous Hash Browns

Rinse shredded potatoes until water is clear, then drain and squeeze dry
- 2 med russet potatoes shredded
- 1/2 med onion, finely chopped
- 1/4 c all purpose flour
- 1 egg
- 1 c oil for frying or as needed
- salt and pepper to taste
