Cherry Streusel Cake

Preheat oven to 350 and line a 11x17 pan with parchment paper
- 1 c butter
- 1 3/4 c sugar

Macadamia Lemon Bars

Preheat oven to 350. In large bowl, mix flour, confectioners sugar, and melted butter until crumbly; stir in nuts
- 1 c all purpose flour
- 1/4 c confectioners sugar
- 1/2 c butter, melted
- 1/4 c chopped macadamia nuts

- 1 c sugar
- 2 T all purpose flour
- 1/2 t baking powder

Chocolate Chip Scones (skinny)

Preheat oven to 400. Combine 1/2 c currants and 2 T water in a microwave safe bowl
- 1/2 c currants, chopped (or raisins)
- 2 T water
- 3 c low fat baking mix such as reduced fat Bisquick
- 5 T sugar, divided
- 1/2 t cinnamon
- 2 T butter, chilled and cut into small pieces
- 2/3 c fat free half and half
- 2 T semisweet chocolate minichips
- 1 large egg, separated
- 1 T fat free half and half
- 1/2 c powdered sugar
- 1 1/2 t water
Grandma's Meatloaf

HEAT oven to 350. In large bowl, combine all meat loaf ingredients and mix well
- 1 1/2 pounds ground beef
- 1 cup crushed round buttery crackers
- 1/3 cup milk
- 1/4 cup chopped onion
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 each egg
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- SAUCE
- 1 can 8oz crushed pineapple in heavy syrup, undrained
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 2 teaspoons cornstarch
Garlic Mashed Potatoes

PEEL potatoes and cut into cubes
- 6 large potato
- 6 oz container of cream cheese w/garlic herbs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup milk, more or less
- 4 tablespoons butter
- 1/2 cup Parmesan cheese

Baked Mostaccioli (skinny)

Cook noodles as directed on package
- 8 oz uncooked mostaccioli
- 1/2 lb lean ground turkey
- 1 small onion, chopped
- 1 can 14.5oz diced tomatoes, undrained
- 1 can 6oz tomato paste
- 1/3 c water
- 1 t dried oregano
- 1/2 t salt
- 1/8 t pepper
- 2 c fat free cottage cheese
- 1 t dried marjoram
- 1 1/2 c shredded part skim mozzarella cheese
- 1/4 c grated parmesan
Creamy Risotto

1. Cook onion until soft in 2 tablespoons butter in large skillet over medium heat
- 1/2 cup chopped onion
- 1/4 cup butter, divided
- 1 cup uncooked rice
