Carrot Cake Cookies

Whisk dry ingredients together
- Filling:
- 1 1/8 c. flour
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1 stick softened butter
- 1/3 c. + 2 Tbs. brown sugar
- 1/3 c. + 2 Tbs. sugar
- 1 egg
- 1/2 tsp. vanilla
- 1 c. grated carrots (around 2)
- 1 c. chopped nuts
- 1/2 c. raisins
- 8 oz. cream cheese
- 1/4 c. honey
Baked Spaghetti

Combine tomatoes, tomato sauce, water, onions, peppers, garlic, parsley, seasonings, sugar, and bay leaves
- 2 c. diced can tomatoes
- 2 c. tomato sauce
- 1 c. water
- 1/2 c. diced onion
- 1/2 c. green pepper
- 2 minced garlic cloves
- 1/4 c. chopped parsley
- 1 1/2 tsp. Italian seasoning
- 1 1/2 tsp. Paula Deen House Seasoning OR 4:1 salt, garlic powder, and pepper
- 1 1/2 tsp. sugar
- 2 small bay leaves
- 1 1/2 lbs. ground beef
- 8 oz. angel hair, cooked
- 1 c. grated Cheddar
- 1 c. Monterey Jack
Meatballs a la Pizzaiola

Preheat the oven to 350 degrees
- 2 large shallots, peeled and chopped
- 1/3 c. packed fresh basil
- 1/3 c. shredded mozzarella
- 1/4 c. grated Parmesan
- 1 Tbs. tomato paste
- 1 tsp. crushed red pepper flakes
- 1 1/2 tsp. kosher salt
- 1 1/2 lb. ground beef (80/20)
- 1 lb. ground pork
- 6 oz. smoked mozzarella or provolone, cut in 1/2" cubes
- 1/3 c. olive oil
- Marinara sauce, warmed
Shrimp Beignets

Mix dry ingredients. Add other ingredients except water and hot sauce
- Creole Tartar Sauce:
- 2 c. flour
- 2 heaping Tbs. baking powder
- 1/2 tsp. ground ginger
- 1 bunch green onions
- 1 1/2 c. cooked shrimp
- 3 Tbs. chopped parsley
- 3 dashes hot sauce
- Water, shrimp stock, or beer
- 1 c. mayo
- 2 heaping Tbs. Creole mustard
- 1 hard-boiled egg, chopped
- 1/2 lemon, squeezed
- 3 Tbs. chopped parsley
- 3 Tbs. chopped onion
- 3 Tbs. chopped dill pickle
- Tabasco sauce to taste
- Salt and pepper to taste
Praline Cookies

Cream sugar, butter and egg
- Icing:
- 1/2 c. softened butter
- 1 1/2 c. brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. pecans, chopped
- 1 c. brown sugar
- 1/2 c. cream
- 1 c. powdered sugar
Olive Bites

Combine flour and butter until the mixture resembles bread crumbs
- 1/2 c. flour
- 5 Tbs. unsalted butter
- 1/3 c. grated Cheddar
- 1/4 c. grated Parmesan
- 20 pimiento-stuffed olives
Mexican Taboli

Mix veggies. Add oil, garlic salt, and vinegar
- 2 large tomatoes, peeled and chopped
- 3-4 green onions, chopped
- 1 can (4 oz.) green chilies, chopped
- 1 can (4 oz.) black olives, chopped
- 3 Tbs. olive oil
- 1 1/2 tsp. garlic salt
- 1 1/2 Tbs. vinegar
Onion Soup

Slowly cook onions in butter and oil until carmelized
- 8 large onions, thinly sliced
- 4 Tbs. butter
- 1 Tbs. olive oil
- 1 tsp. salt
- 1 tsp. sugar
- 1/4 c. sifted flour
- 6 c. chicken stock
- 2 c. beef stock (can be 4 chicken,4 beef)
- 1/4 c. white wine
Brown Derby Salad

Arrange lettuce in salad bowl
- Dressing (makes 2 cups):
- 1/2 head Boston lettuce, shredded
- 2 chicken breasts, cooked, chilled, diced
- 3 hard-cooked eggs, chopped
- 6 slices bacon, cooked and crumbled
- 3 oz. Roquefort cheese, crumbled
- 2 medium avocados, diced
- 1 Tbs. snipped chives
- 1/2 c. red wine vinegar
- 1 Tbs. lemon juice
- 1 1/2 tsp. pepper
- 1 tsp. salt
- 1/2 tsp. sugar
- 1/2 tsp. dry mustard
- 1 1/2 tsp. Worchestershire
- 1 clove garlic, minced
- 1 1/2 c. salad oil
