Greek food--Tzatzki--cucumber yogurt dip

Combine olive oi, vinegar, garlic, salt, and pepper in a bowl
- 3 tbsp. olive oil
- 1 tbsp. vinegar
- 2 cloves garlic, minced finely
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 cup greek yogurt, strained
- 1 cup sour cream
- 2 cucumber, peeled, seeded, and diced
- 1 teaspoon chopped fresh dill
- I omitted the white pepper
Caramel Popcorn

Preheat oven to 250. Place popcorn in a large bowl and set aside
- 6 Quarts Popped Popcorn
- 2 Cups Packed Brown Sugar
- 1 Cup Butter or Margarine
- 1/2 Cup Corn Syrup (Light)
- 1 teas Salt
- 1 Tbls Vanilla Extract
- 1/2 teas Baking Soda
Dipping Oil-Basic and Rosemary Garlic

- 1 cup extra-virgin olive oil
- 1/2 teaspoon fresh ground pepper
- 2 tablespoons fresh rosemary, minced
- 4-5 garlic cloves, minced (raw,roasted or fried)
- 1/2 teaspoon salt
- 1 pinch red pepper flakes
CASSEROLE, Cajun Peas

Place in lightly greased 2 quart baking dish
- 3 cups long grain rice. I use minute rice. It work great.
- 1 8 ounce cup sour cream
- 1 teaspoon poultry seasoning
- 1 16 ounce red beans drained
- 2 cups canned blackeyed peas
- 1/2 cup diced hickory smoked saussage
- 1/2 cup shredded Monterry Jack cheese

- 2 chicken breasts
- 5 chicken legs
- 1 to 2 tablespoons McGuffy's spice
- Salt and pepper
- 1 Tablespoon poultry seasoning

- 1 can comstock chicken broth (low sodium)

- 1/2 cup all-purpose flour

- 1/2 cup butter or margarine, melted
Salad, Tropical Chicken Salad

Place chicken and celery in a large bowl
- 2 cups cubed cooked chicken
- 1 cup chopped celery
- 1 cup mayonnaise
- 1/2 to 1 teaspoon curry powder
- 1 can (20 ounces) chunk pineapple, drained
- 2 large firm bananas, sliced
- 1 can ( 11 ounces) mandarin oranges, draiknes
- 1/2 cup flkes coconut
- Salad greens, optional
- 3/4 cup salted peanuts, almonds or cashew halves
Broccoli Garlic Cheese

Saute onion and mushrooms in butter for 15 minutes
- 1 stick or 1/4 lb butter.
- 1/4 cup to 1/2 cup onion chopped fine
- 1 4 oz. can drained mushrooms
- 1 small Kraft garlic cheese
- 1 can cream of mushroom soup
- 2 10 oz. package chopped broccoli.
Rice, Cilantro Rice

Puree the above in a blender, add to the cooked rice, stir well
- For each cup of rice:
- Cook rice as usual with 1 tsp. salt per cup of rice.
- 2/3 cup cilantro, loosely packed
- 1/3 cup chopped onion
- 1/4 cup chopped scalions
- 1 jalapeno (or to taste)
- 1 tablespoon lime juice
- 1 teaspoon olive oil
