Position rack in center of oven and preheat to 350 Degrees F
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup (2 sticks margarine (room temp)
- 1 cup firmly packed light brown sugar
- 1 cup sugar
- 2 eggs (room temp)
- 2 tablespoons milk
- 2 teaspoons vanilla
- 2 1/2 cups rolled oats
- 1 12 ounce pkg. semi sweet chocolate chips
- 1 1/2 cups chopped nuts

- Makes 1 (10-inch) cheesecake
- 1 3/4 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter or margarine, melted
- 5 ( 8-ounce) packages cream cheese, softened
- 1 3/4 cups sugar
- 5 eggs
- 2 egg yolks
- 3 tablespopons all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon grated orange rind
- 1/2 teaspoon grated lemon rind
- 1/4 teaspoon vanilla extract
- 1/4 cup commercial sour cream
- Raspberry Sauce
- Fresh raspberries (optional)
- Mint leaves (optional)
Salad, Marinated Shrimp Salad

In a large bowl, combine shrimp and next 5 ingredients; toss gently
- 1 pound medium fresh cooked shrimp, peeled and deveined
- 1 (14-ounce) can hearts of palm, drained and cut into bite-sized pieces
- 1 (8-ounce)can bamboo shoots, drained
- 1 (8-ounce) can artichoke hearts, drained and quatered
- 1 (8-ounce) package sliced fresh mushrooms
- 1 pint cherry tomatoes, halved
- 1 1/2 cups vegetable oil
- 1 cup white vinegar
- 3/4 cup chopped fresh parsley
- 3 garlic cloves, minced
- 1 tablespoon salt
- 1 1/2 teaspoons dried thyme leaves
- 1 teaspoon ground black pepper

Combine first 4 ingredients in a shallow dish
- 1 cup all-purpose flour
- 1 tablespoon salt
- 2 teaspoons ground black pepper
- 2 teaspoons ground red pepper
- 2 1/2 cups cornmeal mix
- 1 tablespoon garlic powder
- 2 tablespoons dried thyme
- 20 (6-8 ounce) farm-raised catfish fillets, cut into strips
- 1 cup buttermilk
- Peant oil
Potato Salad, Ultimate Creamy

- Nonstick nonflammable cooking spray
- 3 pounds smal new potatoes
- 1/2 cup mayonnaise
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1 tablespoon stone-ground mustard
- 1 tablespoon fresh lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- Fresh basil or dill, for garnish
Grape Leaves (Kirk's)

Dice one of the onions well, and cook together with ground beef in saute pan over medium heat
- Plenty of the following spices:
- 1 jar grape leaves
- 3 cups cooked rice
- 1 pound ground beef or lamb
- 2 medium sized onions
- 2 (28 oz) can "Hunts" Brand diced tomatoes
- 1 (28 oz.) can Hunts Brand Crushed Tomatoes
- Parsley
- Cinnamon
- Paprika
- Cumin
- Garlic salt
- 1/2 cup olive oil
Salad 3 bean Marinated Salad

Really good! This is excellent for buffets
- Marinade:
- 1 can green beans, drained
- 1 can white beans, drained
- 1 can red beans
- 2 medium onion; 1 white, 1 red sliced and separaed into rings
- 1 green pepper
- 4 ribs celery
- large jar pimentos
- Mix and marinate for at least 24 hours.
- 1 cup sugar
- 1 cup vinegar
- 1/2 cup salad oil
- 1 teaspoon paprika
- 1 teaspoon salt
Potato Salad,Todd English's Mustard

Really good! Very pretty and a little unusual flavor
- 3 1/2 pounds red bliss potatoes, diced 1 inch
- 1 tablespoon salt
- 2 cups mayonnaise
- 1/2 cup Dijon mustard
- 2 tablespoons whole grain mustard
- 2 tablespoons French's mustard
- 1/2 cup roasted red pepper, diced (I used peppers in the jar)
- 1/4 cup red wine vinegar
- 1 cup red onon, diced
- 1 cup parsley, chopped
- 2 tablespoons extra virgin olive oil
