Key Lime Coconut Snowballs

Combine crumbs, sweetened condensed milk, rind, juice, and vanilla in a medium bowl
- 2/3 cup graham cracker crumbs (about 4 cookie sheets)
- 6 tablespoons fat-free sweetened condensed milk
- 1 teaspoon grated Key lime rind 1
- 1/2 tablespoons fresh Key lime juice
- 1 teaspoon vanilla extract
- 1 cup shredded unsweetened coconut
- 1 1/4 cups powdered sugar
Salad, Annie's own Chicken breast tropical salad

Very tropical salad fit for a luncheon!
- 1 12.5 ounch can of Premium chunk chicken breast
- 1/2 can Dole tropical gold pineapple chunks (cut each chunk in half)
- 3 ribs celery chopped fine
- 1/2 cup vadalia onion chopped fine
- 1/2 cup of black olives cut in half
- 1 cup seedless purple grapes cut in half
- 1 cup mayonnaise (more or less if needed)
Dip, Philly Shrimp Dip

Graduallly add the ( cream ) to the cream cheese, blending until smooth
- 1/3 cup cream
- 1 ( 8 ounce) package Philadelphia Brand Cream Cheese
- 2 teaspoons lemon jice
- 1/4 teaspoon onion jice
- Dash of Worcestershikre sauce
- 3/4 cup cooked or canned shrimp, chopped
Cake, Waldorf Astoria Cake The Famous Red Cake

Sift flour and salt together In separae dish mix cocoa and food coloring
- 1 1/2 cups sugar
- 1/2 cup shortening
- 2 eggs
- 1 (2 ounce) bottle red food coloring
- 1 teaspoon vanilla
- 2 teaspoons cocoa
- 1 cup buttermilk
- 1/2 teaspoon salt
- 2 1/4 cups flour
- 1 teaspoon soda
- 1 tablespoon vinegar
Guacamole Bruschetta

Preheat the oven to 400ºF
- 1/2 loaf French bread
- 1 clove garlic
- 2 Tablespoons olive oil
- 2 tomatoes, medium chopped
- 2 avocados, medium chopped
- 1/3 cup finely chopped onion
- 1/4 cup chopped cilantro
- 2 Tablespoons freshly squeezed lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Poultry, Chipotle Mango BBQ Chicken Guy Fieri *****

Delicious chicken marinade
- 1 1/2 cups mango, peeled, pitted and roughly chopped
- 3/4 cups fresh cilantro (loose pack, not chopped, stems and all)
- 2 chipotle peppers in adobo, plus 1 tablespoon adobo sauce
- 2 tablespoons unseasoned rice wine vinegar
- 4 cloves garlic, peeled
- 2 tablespoons fresh lemon juice
- 1 tablespoon canola oil, plus extra for grill
- 2 teaspoons Kosher salt
- 1 teaspoon freshly cracked black pepper
- 2 pounds chicken thighs and drumsticks, bone in, skin on
- I used one chipotle pepper but think two might have been better. Could not taste the heat with one. Also used 1 tablespoon lemon instead of two. I think that was about right.
Cake Oatmeal Shortcake for strawberry shortcake

For Shorcakes: Preheat oven to 425 degrees F
- 2 cups all purpose flour
- 1/2 cup old-fashioned oats
- 1/2 cup (packed) golden brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) chilled unsalted butter, cut into small pieces
- 2/3 cup whole milk
- 2 teaspoons sugar
- Fruit
- 1 pound ripe strawberries
- 1/3 cup of sugar or to taste
- 2/3 cup chilled whipping cream
- 2 tablespoons powdered sugar
Salad , Wilted Spinach Salad

Fry bacon until crisp. Add onions, salt, pepper, vinegar, water and sugar; stir;bring to boil Pour over spinach
- 6 cups Fresh Spinach
- 4 slices of bacon diced
- 4 green onions
- 1/2 teaspoon salt
- pinch of pepper
- 3 tablespoons of vinegar
- 3 tablespoons water
- 2 tablespoons brown sugar
- 1 hard boiled egg (optional for garnish)
Shrimp Adriatic Style

(Breaded and Broiled)
- 1 1/2 lbs. small shrimp
- 3 1/2 Tablespoons olive oil
- 3 1/2 Tablespoons vegetable oil
- 2/3 cups fine unflavored bread crumbs.
- 1/2 teaspoon very finely chopped garlic
- 2 teaspoons finely chopped parsley
- 3/4 teaspoon salt
- Freshly ground pepper
- 5 to 6 twists of the mill
- lemon wedges
Potato Gratin

Preheat oven 425 degrees F
- Slice potatoes very very thin
- 1 clove garlic
- 4 tablespoons unsalted butter
- 2 lb boiling potatoes cut in 1/8 inch thick slices.
- 1 teaspoon of salt or to taste
- 1/2 teaspoon freshly ground pepper
- 1/8 teaspoon ground nutmeg
- 3/4 lb Beaufort or Gruyere cheese
- I used Gouda and it was delicious shredded
- 1 cup milk
