Buxton Hall Ultimate Apple Pie

- Flaky Pie Dough:
- 6 Tbsp unsalted butter
- 2 1/3 cups all-purpose flour, plus more for dusting
- 2/3 cup whole-wheat pastry flour
- 1/2 tsp kosher salt
- 10 Tbsp cold unsalted butter, cut into small pieces
- 1/2 cup cold whole buttermilk, plus 2 to 3 Tbsp more, if needed
- Filling:
- 3 lb mixed apples (such as Winesap, Mutsu, Granny Smith, and Honeycrisp), cored, peeled, and cut into 1/2-inch-thick slices (about 6 apples)
- 4 oz dried apples, coarsely chopped
- 1/4 cup unsalted butter
- 1/4 cup apple butter
- 3 Tbsp fresh lemon juice (from 2 lemons)
- 1 tsp orange zest (from 1 orange)
- 1/2 tsp grated fresh ginger
- 1/2 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/8 tsp ground cardamom
- 2 cups packed light brown sugar
- 1/4 cup all-purpose flour
- 1/2 tsp kosher salt
- Additional Ingredients:
- 1 large egg, lightly beaten
- 1 1/2 Tbsp demerara sugar

- 2 cups all purpose flour
- 1 1/2 cups sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 4 egg whites from large eggs
- 1/2 cup shortening
- 1 cup whole milk
- 2 large eggs (add egg whites for a white cake; yolks, for a yellow cake)
- 1 1/2 teaspoon vanilla
- 1/2 cup solid vegetable shortening
- 1/2 cup butter or margarine (1 stick) softened
- 1 teaspoon clear vanilla extract
- 4 cups confectioners' sugar, sifted (approximately 1 lb.)
- 2 tablespoons milk
- Makes: About 3 cups of icing.
