Mashed Potatoes with Goat Cheese and Herbs

Heat oil in heavy skillet over medium-high heat
- 2 tsp olive oil
- 3/4 cup shallots, chopped
- 2 1/2 lb yukon gold or red skin potatoes, scrubbed, unpeeled
- 6 to 8 oz soft goat cheese, crumbled
- 1 cup low-fat milk, heated until warm
- 3/4 tsp salt
- Freshly ground white or black pepper
- 1 Tbsp thyme, chopped
- 1 Tbsp chives, chopped
- 1 Tbsp parsley, chopped
- Sprigs of fresh herbs to taste, optional
Cranberry and Dried Cherry Relish*

- 1 12-oz. pkg. fresh cranberries
- 1 cup dried tart cherries
- 1 cup (packed) golden brown sugar
- 1/2 tsp. ground cardamom
Baked Apple Cider Doughnuts

- 3/4 cup all purpose flour
- 1/3 cup sugar

- 1/4 cup butter
- 1 egg, lightly beaten
- 1/3 cup plain low fat yogurt
- 2/3 cup shredded unpeeled apple
- 3 Tbs. sugar
- 1/2 tsp. ground cinnamon
