Ingredients
- Lemon Vinaigrette:
- 1 Fish fillet, such as fresh halibut, sea bass, or salmon
- Sea Salt
- Freshly Ground Pepper
- 2-3 Tblsp Oil, Sunflower or Grapeseed
- Splash of Lemon Vinaigrette
- From 1 to 2 Meyer Lemons, finely grated zest and 2-3 oz juice
- 1 tsp Kosher Salt
- 1 tsp Sugar
- 1/4 tsp Ground White Pepper
- 1 c Mild oil, Sunflower or Grapeseed

Step 1
Basic Technique:
Season fish with salt and pepper. Heat oil in frying pan until hot. Saute fish quickly until golden on both sides,m flesh side down first. Add a splash of lemon vinaigrette. If fish is 1" thick or more, first sear both sides and then place in a preheated 350-degree oven for 5-8 min. w/a total cooking time of no more than 10 min.
If desired:
After searing fish, add a handful of fresh herbs such as basil, flat-head parsley, thyme or rosemary to fish in saute pan along with vinaigrette.
