Easy Sauteed Fish w/Lemon Vinaigrette

Ingredients

  • Lemon Vinaigrette:
  • 1 Fish fillet, such as fresh halibut, sea bass, or salmon
  • Sea Salt
  • Freshly Ground Pepper
  • 2-3 Tblsp Oil, Sunflower or Grapeseed
  • Splash of Lemon Vinaigrette
  • From 1 to 2 Meyer Lemons, finely grated zest and 2-3 oz juice
  • 1 tsp Kosher Salt
  • 1 tsp Sugar
  • 1/4 tsp Ground White Pepper
  • 1 c Mild oil, Sunflower or Grapeseed

Step 1

Basic Technique:

Season fish with salt and pepper. Heat oil in frying pan until hot. Saute fish quickly until golden on both sides,m flesh side down first. Add a splash of lemon vinaigrette. If fish is 1" thick or more, first sear both sides and then place in a preheated 350-degree oven for 5-8 min. w/a total cooking time of no more than 10 min.

If desired:
After searing fish, add a handful of fresh herbs such as basil, flat-head parsley, thyme or rosemary to fish in saute pan along with vinaigrette.
