Southwest Chicken Salad

1. Start by combining dressing ingredients in a small bowl and whisking with a fork or small whisk
- Yield:
- A bed of lettuce layered with colorful veggies, black beans, and cilantro, topped with tangy homemade dressing!

- 3 tablespoons oil
- 3 tablespoons Balsamic vinegar*
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- dash pepper
- Salad and Toppings:
- Approximately 4 cups lettuce of your choice, freshly washed and torn
- 1 cup chopped multi-colored bell peppers (green, red, yellow, and/or orange)
- 1 cup cooked or grilled chicken, cubed
- 1 cup cooked black beans, rinsed and drained
- 1/2 cup sliced green onion tops
- 2 avocados, diced
- a handful of chopped fresh cilantro

Preheat oven at 375 Cream butter, peanut butter, sugar and brown sugar
- 1/2 cup butter
- 1/2 cup peanut butter
- 1/2 cup sugar

- 1 egg
- 1/2 tsp. vanilla
- 1 1/4 cup flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
Easy Strawberry Cream Dessert Squares

1 Heat oven to 350°F
- 1 roll (16.5 oz) Pillsbury® refrigerated sugar cookies
- 2 packages (8 oz each) cream cheese, softened
- 1/4 cup sugar
- 1 cup strawberry topping (from an 11.75-oz jar)
- 2 eggs
- 1 container (16 oz) frozen whipped topping, thawed
- 4 to 6 drops red food color, if desired
- Fresh berries, if desired

- 2 cups (12-oz. pkg.) Semi- sweet chocolate morsels, divided
- 3/4 cup (1 1/2 sticks) butter, cut into pieces
- 2 tbs. water
- 1/4 cup cocoa
- 4 eggs
- 1/3 cup sugar
- 1 tsp. vanilla
- 1 cup pecans, finely ground
- 1/4 cup heavy whipping cream

- 8 sheets phyllo dough, thawed
- 2 tablespoons non-hydrogenated margarine, melted and slightly cooled
- 1/4 cup brown sugar, packed
- 1/2 cup light corn syrup
- 2/3 cups old fashioned oats
- 1 cup pecans, chopped
- 1 teaspoon vanilla
- pinch salt
- 1 egg, beaten

- 8 ounces uncooked spaghetti
- 12 ounces peeled and deveined medium shrimp
- 2 tablespoons pine nuts
- 1 cup 1% low-fat milk, divided
- 1 tablespoon all-purpose flour
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon ground nutmeg
