Beef and Broccoli

Directions Heat vegetable oil in a large skillet over high heat until hot but not smoking
- 1 tablespoon vegetable oil
- 1 piece (3/4 pound) filet of beef, cut in 3/4-inch strips (about 2 cups)
- 1/2 teaspoon salt
- 4 scallions, finely chopped (about 1/4 cup)
- 2 small garlic cloves, minced
- 1 pound broccoli, florets cut into small pieces, stalks peeled and cut into 1/4-inch dice
- 1 cup low-sodium beef broth
- 3 tablespoons soy sauce
- 1 tablespoon plus 2 teaspoons cornstarch
- 1 teaspoon dark sesame oil
- Cooked rice, for serving
Black Bean Burgers

2.Burgers: Place the garlic in a food processor, and pulse until chopped
- 2 cloves garlic, cut in half
- 1/2 red onion, quartered
- 2 celery stalks, chopped
- 1 cup mushrooms, such as cremini or white button
- 1 cup spinach leaves
- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup chunky salsa
- 1/4 cup rolled oats
- 2 egg whites
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon corn oil
- 2 whole wheat pitas, halved and warmed
Piggies in a Blanket

In a bowl, dissolve yeast and 1 teaspoon sugar in milk and water; let stand for 5 minutes
- 1 package (1/4 ounce) active dry yeast
- 1/3 cup plus 1 teaspoon Domino® or C&H® Granulated Pure Cane Sugar, divided
- 2/3 cup warm milk (110° to 115°)
- 1/3 cup warm water (110° to 115°)
- 1 egg, beaten
- 2 tablespoons plus 2 teaspoons shortening, melted
- 1 teaspoon salt
- 3-2/3 cups all-purpose flour
- 10 hot dogs (I would recommend using jumbo dogs)
- 2 slices process American cheese (Or more if you'd like)
Tostados

Position racks in upper and lower thirds of the oven; preheat to 375°F
- 8 6-inch corn tortillas
- Canola oil cooking spray
- 1 6- to 7-ounce can boneless, skinless wild Alaskan salmon, drained
- 1 avocado, diced
- 2 tablespoons minced pickled jalapeños, plus 2 tablespoons pickling juice from the jar, divided
- 2 cups coleslaw mix (see Tip) or shredded cabbage
- 2 tablespoons chopped cilantro
- 1 15-ounce can black beans, rinsed
- 3 tablespoons reduced-fat sour cream
- 2 tablespoons prepared salsa
- 2 scallions, chopped
- Lime wedges (optional)
Vanilla Ice Cream

Instructions COMBINE all ingredients in container of ice cream maker; mix well
- 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
- 2 tablespoons vanilla extract
Whole Wheat Corn Waffles

Mix together milk, eggs, butter and oil
- 3 cups whole wheat flour
- 1 cup cornmeal
- 1/4 cup brown sugar
- 2 Tablespoons baking powder
- 1 1/2 teaspoons salt
- 4 eggs
- 4 cups of milk
- 1/2 cup butter (melted)
- 1/2 oil
Pumpkin Spice Bread

1. In a large mixing bowl, combine sugar, oil, and eggs
- Yield:
- A moist, sweet pumpkin quick bread with cinnamon and nutmeg
- 2 loaves
- Ingredients:
- 3 cups sugar
- 1 cup oil
- 3 eggs
- 2/3 cup water
- 2 cups pumpkin (or one, 15-ounce can)
- 1 cup chopped nuts, optional
- 3 cups flour
- 2 teaspoons cinnamon
- 1 1/2 teaspoons salt
- 1 teaspoon nutmeg
- 2 teaspoons baking soda
- 1 tablespoon baking powder
Snowballs ( Mexican Wedding Cakes)

Preheat oven to 350° F. In a large bowl, cream butter, granulated sugar and ½ cup confectioners sugar
- 1 cup butter softened
- 1/2 cup granulated sugar
- 1/2 cup confectioner's sugar
- 1 egg
- 1 tablespoon vanilla
- 2 1/2 - 3 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup toasted slivered almonds ground
Tri-Color Stuffed Peppers ( This is a good recipe - Kathy)

HEAT oven to 400ºF. Brown meat in a large skillet on medium heat
- 3/4 pound extra lean ground beef
- 1 pkg. (10 oz.) frozen corn
- 1-1/2 cups TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
- 1-1/2 cups cooked instant brown rice
- 1 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses, divided
- 1 each large red, yellow and green pepper, cut lengthwise in half, seeds removed
- 1/2 cup water
Cranberry Nut Biscuits

Preheat the oven to 425 degrees
- We took our basic buttermilk biscuit recipe for drop biscuits and added cranberries, nuts, spices, orange zest, and a little more sugar. It is not overly sweet, more like bread with fruit and nuts. If you want a sweet bread, increase the sugar to 1/4 cup.
- Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 tablespoon sugar
- 1/2 teaspoons salt
- 1/4 pound (one stick) cold butter
- 3/4 cup dried cranberries, chopped
- 1/2 cup walnut pieces
- 1 tablespoon orange zest
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 1/2 cups buttermilk or enough to make a soft batter
