Sweet Corn Spoonbread

1. Adjust oven rack to middle position and heat oven to 400 degrees
- 1 cup cornmeal
- 2 3/4 cups whole milk
- 4 tablespoons unsalted butter
- 2 cups corn kernels (see note)
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 3 large eggs, separated
- 1/4 teaspoon cream of tartar
Alfredo Sauce

Low Calorie Alfredo Sauce that’s easy to make Combine all ingredients over low heat until melted
- 1/2 cups Skim Milk
- 1 Tablespoon Parmesan Cheese, Grated
- 1 teaspoon Garlic Powder
- 1 teaspoon Butter
- 3 wedges The Laughing Cow Light Creamy Swiss
Roasted Cauliflower Parmesan

Directions Heat oven to 350°F
- 1 lg head cauliflower (about 2 lb), stemmed and cut into 1/3" slices
- 1/2 C grated parmesan cheese (about 1 1/2 oz)
- Heat oven to 350°F. Line 2 large rimmed baking sheets with foil or parchment paper and lightly coat or spray with oil. Arrange cauliflower on pans without overlapping.
- Sprinkle with cheese and bake on top rack until golden brown, about 40 minutes. Season with salt and freshly ground black pepper to taste.
Broccoli Salad

Mix ingredients together. Add dressing just before serving
- Dressing:
- 1 package broccoli slaw mix
- 1 bunch green onions, chopped
- 2 pkg. Beef Ramen noodles, crushed
- 3/4 c. slivered almonds
- 1 c. roasted sunflower seeds, optional
- 1 c. oil
- 1/2 c. sugar
- 2 seasoning packets from soups
- 1/4 c. vinegar

Directions In a non-reactive bowl combine yogurt with the spices and 2 Tbsp
- 4 (6 oz) chicken breasts, trimmed and lightly pounded
- 1 cup Dannon® Plain Yogurt
- 1 Tbsp. lime or lemon juice
- 1 Tbsp. chili powder
- 1 tsp. ground cumin
- 1/2 tsp. ground chipotle or 1/4 tsp. ground red pepper
- 1/2 cup chopped cilantro, divided
- 1/8 tsp. Kosher salt
Fried Corn with Bacon

Directions: 1. Slice corn off of cob and scrape cob to release the milk
- Ingredients:
- 6 ears corn, husked and cleaned
- 6 slices bacon 1/2 large green bell pepper, chopped
Bread Machine Cinnamon Rolls

Delicious homemade cinnamon rolls are easy to make with this recipe
- DOUGH:
- 1 cup plus 2 tablespoons warm milk
- 3 tablespoons canola oil
- 1 egg, lightly beaten plus 2 egg whites
- 1/2 cup sugar
- 4 cups flour (Add a bit more if dough seems too wet after first few minutes of kneading in the bread machine.)
- 1 teaspoon salt
- 3 teaspoons bread machine yeast
- FILLING (I doubled this since we like our filling, oh yes we do!):
- 2 tablespoons butter
- 2/3 cup brown sugar mixed with 1 tablespoon cinnamon
- ICING:
- 1 teaspoon milk
- 1 1/2 cups confectioners sugar
- 4 tablespoons (or less) butter, softened
- 1 teaspoon vanilla
Fried Rice 1

In a saucepan bring water to a boil
- 1 1/3 cup uncooked white rice
- 1 2/3 cups water
- 3 eggs, lightly beaten
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 3 tsp. vegetable oil, divided
- 1/4 lb. bacon, cut into strips
- 1/8 cup soy sauce
- 1 (10 oz.) pkg. frozen green peas, thawed
- 2 green onions, chopped
