Refried Bean Soup

In a large saucepan, combine the first eight ingredients

- Ingredients
- 1 can (16 ounces) spicy fat-free refried beans
- 1 can (15-1/4 ounces) whole kernel corn, drained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (14-1/2 ounces) chicken broth
- 1 can (14-1/2 ounces) stewed tomatoes, cut up
- 1/2 cup water
- 1 can (4 ounces) chopped green chilies
- 1/4 cup salsa
- Tortilla chips
Chicken and White Bean Salad

To prepare vinaigrette: Peel the garlic and smash with the side of a chef’s knife
- Vinaigrette
- 1 medium clove garlic
- 1/4 teaspoon salt
- 5 tablespoons extra-virgin olive oil
- 6 tablespoons fresh orange juice, plus more to taste
- 1/4 cup white-wine vinegar or red-wine vinegar
- 1 tablespoon Dijon mustard
- Salad
- 1 15-ounce can cannellini or other white beans, rinsed and drained
- 2 1/2 cups diced cooked chicken breast (see Tip)
- 2 cups diced zucchini and/or summer squash (about 2 small)
- 1 1/2 cups diced celery
- 1/4 cup finely diced ricotta salata, halloumi (see Shopping Tip, above) or feta cheese
- 1/3 cup chopped, well-drained, oil-packed sun-dried tomatoes (optional)
- 1 cup coarsely chopped fresh basil, plus whole basil leaves for garnish
- Salt & freshly ground pepper to taste (optional)
- 2 cups torn escarole or romaine lettuce
- 2 cups torn radicchio leaves
Cherry Tomato Orzo Salad

I am not the most talented of gardeners
- 8 ounces orzo pasta
- Salt
- 1 pint red cherry tomatoes, sliced in half
- 1 pint yellow cherry tomatoes, sliced in half
- 1/4 cup olive oil
- 8 ounces feta cheese, crumbled
- 1 large cucumber, peeled and chopped
- 2 green onions, thinly sliced
- 2 Tbsp minced fresh oregano
- Juice of a lemon
- Black pepper to taste
Spicy Shrimp

Preparation Instructions First, thoroughly rinse raw shrimp w/shells still on
- * 3 pounds (more Or Less) Unpeeled Shrimp (21-26 Count Or Larger)
- * ½ cups Olive Oil
- * Salt And Pepper, to taste
- * 3 whole Lemons (juice Of)
- * ¼ cups (to 1/2 Cup) Worcestershire Sauce
- * Tabasco
- * 1 stick Butter
Pumpkin Pancakes

- 1/2 jar DICKINSONS Pumpkin Butter
- 12 oz. PET Evaporated Milk
- 2 Tbsp. CRISCO Light Olive Oil
- 2 c. Baking Mix
- 1/2 tsp. Cinnamon
- 2 Eggs
- 1 Tsp. Vanilla Extract
Easy Black Bean Enchiladas

Preheat the oven to 350°F
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 teaspoon ground red pepper
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 2 cans (15 ounces each) black beans, rinsed and drained
- 1 1/2 cups salsa, divided
- 12 corn tortillas (6" each), warmed according to package directions
- 1 can (14.5 ounces) diced tomatoes, well drained
- 1 cup shredded reduced-fat Cheddar cheese
- 3 cups finely shredded lettuce
- 6 tablespoons fat-free sour cream
Banana Muffins

- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 2 cups sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 tablespoon vanilla extract
- 4 ripe bananas, peeled and coarsely mashed

- 1/2 teaspoon baking soda

- dash salt
- 1/4 cup (1/2 stick) butter
- 1/4 cup vegetable oil
- 2 tablespoons cocoa powder
- 1/2 cup water
- 1/4 cup buttermilk
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 cup (1/2 stick) butter
- 2 tablespoons cocoa
- 3-4 tablespoons milk (as needed for consistency)
- 1/2 cup pecans, chopped
- 2 cups icing sugar
- 1/2 teaspoon vanilla
- ice cream (for serving)
- caramel sauce (for serving; this one is delicious!)
- whipped cream (for serving)

- 3/4 lb flank steak, sliced 1/4" thick
- 3 tsp reduced-sodium soy sauce
- 2 tsp toasted sesame oil
- 1 Tbsp grated fresh ginger
