AVOCADO VINAIGRETTE

In a small mixing bowl, mix together vinegar and mustard until smoothly blended
- 1 cup red wine vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons minced Florida onion
- 2 cups olive oil
- 1 teaspoon sugar
- 1 Florida avocado, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon white pepper
Pesto Cheesy Chicken Rolls

Preheat oven to 350. spread 2 to 3 tbs
- 4 skinless, boneless chicken breast halves- pounded to 1/4 inch thickness
- 1 cup prepared basil pesto
- 4 thick slices mozzarella cheese

Tuscan Chicken Pasta

1. Cook the pasta according to the package directions
- 2 oz Barilla Plus penne pasta
- 2 chicken breasts, pounded to 1/4-inch thickness
- Salt and pepper
- 1 tsp olive oil
- 1 clove garlic, crushed
- 1/2 tsp dried rosemary
- 1 cup cannellini beans, rinsed
- 2 Tbsp diced roasted red pepper
- 4 cups baby spinach leaves
- 2 Tbsp grated Parmesan
Taco Quesadillas

Spread a small amount of taco meat, beans, and cheese on a half of the tortillas
- 1/2 pound ground beef, cooked and seasoned ( or use taco meat from the freezer)
- 1 can refried beans ( or homemade ones)
- 2 cups grated cheese, either cheddar or colby jack
- 12 tortillas
- salsa and guacamole for serving

Granny Smith Apple Bundt Cake

1. Prepare bundt pan(butter and flour or bakers joys) and preheat oven to 325 2
- 2 c sugar
- 3 eggs
- 2 c vegetable oil
- 1 orange(squeeze juice save peel for zest)
- 3 c all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 Tbsp cinnamon
- 2 tsp pure vanilla extract
- 1 tsp nutmeg
- 3 lg granny smith apples peeled and cored and cubed in
- small pieces
- 1 c chopped pecans

- GLAZE
- 1 c powdered sugar
- 1 tsp orange zest
- 1 dash(es) orange extract(optional)
- 1 Tbsp milk( depending on how thick you want your
- glaze)
Pineapple Upside Down Muffins

Preheat oven to 400°F. Coat 12 muffin cups with cooking spray

- 2 tablespoons packed light brown sugar
- 2 tablespoons chopped walnuts, or pecans (optional)
- 1 10-ounce can pineapple slices
- Muffins
- 3/4 cup whole-wheat flour
- 3/4 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 2 large eggs
- 1/2 cup packed light brown sugar
- 1/4 cup canola oil
- 2 tablespoons pineapple juice, or orange juice
- 1 teaspoon vanilla extract
- 1 8-ounce can crushed pineapple, (not drained)
- 1 cup grated carrot, (1 large)
- 1/2 cup old-fashioned oats
- 3/4 cup raisins, preferably baking raisins (see Ingredient note)
- 1/4 cup chopped walnuts, or pecans (optional)
Easy Cheese Taquitos

- 12 corn tortillas ( I used white corn)
- 1 cup shredded cheese ( We like to use cheddar or colby jack)
