Crispy Fish Fingers with Jalapeno Ranch Salad

LINE 15x10x1-inch baking pan with foil
- 1 Tbsp. oil
- 1 lb. orange roughy fillets
- 1 env. OVEN FRY Fish Fry Seasoned Coating Mix for Fish
- 1/2 cup KRAFT Lite Ranch Dressing
- 2 jalapeño peppers, stemmed, halved and seeded
- 1/4 cup cilantro leaves
- 2 Tbsp. lime juice
- 1 bag (10 oz.) salad greens, torn
- 2 cups cherry tomatoes, halved
Muffins

Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups
- 1 cup Fiber One® original bran cereal
- 1 1/3 cups buttermilk
- 1/4 cup canola or vegetable oil
- 1 egg
- 3/4 cup packed brown sugar
- 1/2 cup Gold Medal® whole wheat flour
- 1/2 cup Gold Medal® all-purpose flour
- 1/2 cup unsweetened baking cocoa
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/3 cup miniature semisweet chocolate chips
Taco Quesadillas

Spread a small amount of taco meat, beans, and cheese on a half of the tortillas
- 1/2 pound ground beef, cooked and seasoned ( or use taco meat from the freezer)
- 1 can refried beans ( or homemade ones)
- 2 cups grated cheese, either cheddar or colby jack
- 12 tortillas
- salsa and guacamole for serving
Fruit Compote Recipe

In a large bowl, combine the first five ingredients
- 2 cans (15-1/4 ounces each) sliced pears, drained
- 1 can (29 ounces) sliced peaches, drained
- 1 can (20 ounces) unsweetened pineapple chunks, drained
- 1 package (20 ounces) pitted dried plums
- 1 jar (16 ounces) unsweetened applesauce
- 1 can (21 ounces) cherry pie filling
- 1/4 cup packed brown sugar
Cheese Ball

Let cheese soften. Beat all ingredients until smooth
- 1 (8oz) pkg. cream cheese
- 1/4 cup sour cream
- 1 tbs. steak sauce
- 4 tbs. butter
- 1 cup sharp shredded cheddar
- 1/4 cup mayonnaise
- 1 1/2 tbs. dried onions
Very Special Brisket

Mix and pour over meat, which has been put in a 13x9 inch pyrex baking dish
- 4 to 5 pd. beef brisket
- 1/4 tsp. salt
- 1/8 tsp. garlic powder
- 2 tbs. Worcestershire sauce
- 2 tbs. soy sauce
- 1/4 tsp. sugar
- 1/2 tsp. liquid smoke
- 1 tsp. Kitchen Bouquet
- 1/4 to 1/2 tsp. Tabasco sauce
- 2 tsp. onions, chopped
Basil Shrimp and Pasta

Cook pasta and drain. Meanwhile melt butter in large skillet on medium heat
- 8 oz. pasta, such as penne
- 2 tbs. butter
- 1 pd. shrimp
- 1 clove garlic, minced
- 3/4 cup heavy cream
- 1 tbs. McCormick basil leaves
- 1/4 cup Parmesan cheese or crumbled goat cheese (chevre)
- 1/4 tsp. black pepper

- 1/2 cup shortening (half butter or margarine, softened)
- 1/2 cup peanut butter
- 1/2 cup sugar
