Jalapeno-Cheddar Cornbread

Sift together the flour, cornmeal, sugar, baking powder, and salt
- 3 cups all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 2 Tablespoons baking powder
- 2 teaspoons kosher salt
- 2 cups buttermilk
- 3 large eggs, slightly beaten
- 1/2 pound (2 sticks) unsalted butter, melted, plus extra to grease the pan
- 8 ounces extra-sharp cheddar, grated
- 1/3 cup chopped scallions, plus extra for garnish (3-4 scallions)
- 3 Tablespoons seeded and minced fresh jalapeno peppers (2-3 peppers)

- 0.5 cup(s) Scallion-Lemon Mayonnaise (optional)
- 1 pound(s) lean ground turkey breast
- 1 large egg, lightly beaten
- 3 tablespoon(s) chopped fresh dill
- 1.5 tablespoon(s) coarse-grained mustard
- 0.5 teaspoon(s) salt
- 0.25 teaspoon(s) freshly ground pepper
- 6 whole-wheat buns, (optional)

Jamie's Coconut Cake

Preheat oven to 350 Grease on flour 3 (9inch) cake pans
- Filling:
- 2 sticks butter, at room temperature
- 2 cups sugar
- 4 eggs
- 3 cups sifted self-rising flour
- 1 cup coconut milk
- 1 tsp. vanilla
- 3/4 cup sugar
- 1 cup sour cream
- 4 tbs. milk
- 1/2 cup flaked, coconut
- Minute Frosting:
- 1 1/2 cups sugar
- 1/4 tsp. cream of tartar
- 1/8 tsp. salt
- 1/3 cup water
- 2 egg whites
- 1 1/2 tsp. vanilla extract
- 2 to 3 cups flaked, coconut
Buttermilk Biscuits

preheat oven to 400. Mix together flour, sugar, salt, baking powder, and baking soda in a medium bowl
- 2 cups flour
- 1 tbs. sugar
- 1 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 cup unsalted butter, cold
- 1/2 cup buttermilk
- 1/4 cup milk
- melted butter, to brush on top
Pineapple Cream Cake

- 1 box white cake mix, prepared
- 1 cup sugar
- 20 ounces can crushed pineapple, drained
- 1 box (4 oz size) instant vanilla pudding, prepared

- 12 ounces whipped topping
- 1/2 cup toasted coconut

1. Preheat oven to 350 degrees F
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted and cooled
- 1 1/2 cups light brown sugar
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups unsweetened shredded coconut, toasted
- 1 cup macadamia nuts, coarsely chopped
- 6 ounces white chocolate, chopped (or 1 cup white chocolate chips)
Ziti

Bring a large pot of lightly salted water to a boil
- Baked Ziti
- 1 pound dry ziti pasta
- 1 onion, chopped
- 1 pound lean ground beef
- 2 (26 ounce) jars spaghetti sauce
- 6 ounces Provolone cheese, sliced
- 1 1/2 cups sour cream
- 6 ounces mozzarella cheese, shredded
- 2 tablespoons grated Parmesan cheese
- Bake for 30 minutes in the preheated oven, or until cheeses are melted. Freezes well, cover with saran wrap then foil. Thaw in refrigerator.
Pina Colada Cheesecake Recipe

- 15 shortbread cookies, crushed
- 1 cup flaked coconut, toasted
- 3 tablespoons butter, melted
- 3 packages (8 ounces each) reduced-fat cream cheese
- 3/4 cup sugar
- 3/4 cup cream of coconut
- 3 tablespoons 2% milk
- 3/4 teaspoon rum extract
- 3 eggs, lightly beaten
- TOPPING:
- 1/2 fresh pineapple, peeled and cored
- 3 tablespoons apple jelly
- Edible blossoms, optional
