Pan Fried Asparagus

Melt butter in a skillet over medium high heat
- 1/4 cup butter
- 2 tbs. olive oil
- 1 tsp. coarse salt
- 1/4 tsp. pepper
- 3 cloves garlic, minced
- 1 pound fresh asparagus spears, trimmed
Crockpot Salsa Chicken

Combine ingredients and cook in crockpot on low for about 4 hours or until done
- 4 chicken breast ( I use boneless skinless)

Sandwich Chicken Salad

Only use the best of the leftover chicken
- Leftover baked chicken (whole, thighs or breasts - anyway it has been seasoned except BBQ)
- Onions, celery, dill slices(finely chopped)
- Walnuts (some chopped fine, some chunky)
- Raisins - if you like plump, juicy raisins, let soak in hot, boiling water for a few hours - otherwise, throw in as is
- salt and pepper
- mayonnaise or salad dressing
Hillbilly Spaghetti Pie

Saute green onion in 2 tablespoons olive oil, on medium heat 5 minutes
- 1 bunch green onions, chopped
- 2 tablespoons olive oil
- 1/2 pound extra lean ground beef
- 1/2 pound Italian sausage, 4 links (sweet or hot) casings removed
- 4 garlic cloves, minced
- 3 tablespoons minced fresh parsley
- 1 (28 ounce) can crushed tomatoes
- 1/4 teaspoon red pepper flakes (I add two more pinches to give it a kick!)
- 1/4 teaspoon dried oregano
- 1 teaspoon salt (or to taste)
- 2 cups water
- 8 ounces spaghetti, broken into 3 inch pieces (I used half of a 16 ounce package–Thin spaghetti–not Angel Hair– but you can use regular )
- 1/4 cup heavy whipping cream
- 4 tablespoons chopped fresh basil
- 1/2 cup fresh grated Parmesan cheese
- 2 cups grated mozzarella cheese
General Tso's Chicken

1. To make the marinade, whisk the hoisin sauce, vinegar, soy sauce, sugar, cornstarch, and water in a bowl
- For the Marinade & Sauce:
- 1/2 cup hoisin sauce
- 1/4 cup white vinegar
- 3 tablespoons soy sauce
- 3 tablespoons sugar
- 2 tablespoons cornstarch
- 1 1/2 cups water
- 4 boneless, skinless chicken breasts (about 1 1/2 pounds), cut into 1-inch pieces
- 1 tablespoon vegetable oil
- 4 garlic cloves, minced
- 2 tablespoons grated fresh ginger
- 1/2 teaspoon crushed red pepper flakes
- For Coating & Frying:
- 3 egg whites
- 1 1/2 cups cornstarch
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 4 cups vegetable oil

Roasted Vegetables with Baked Potatoes

Preheat oven to 400 degrees F
- 2 large baking potatoes or sweet potatoes
- 1 sweet or red onion, cut into wedges
- 1 head broccoli, trimmed, cut into florets
- 1 cup carrots cut into matchsticks
- 1 each red, green & yellow pepper, cored and cut into strips
- 1 cup butternut squash, cubed
- 1 zucchini, cut into half moons
- 1 yellow squash, cut into half-moons
- 5 cloves garlic, chopped
- 3-4 tablespoons extra virgin olive oil, more as needed
- 3-4 tablespoons balsamic vinegar
- Sea salt and fresh ground pepper
- 1 teaspoon dried Italian Herb seasoning- oregano, sage, rosemary, thyme, basil
- 2 tablespoons extra virgin olive oil
- 2-4 tablespoons grated Parmesan, crumbled goat, feta or vegan cheese
