Mango Lassi (Smoothie) Recipe

Combine all ingredients in a blender and process until smooth
- (serves 2)
- 1 cup frozen mango chunks
- 1 cup low fat plain yogurt (Greek is fine)
- 1 tablespoon sugar
- 2 tablespoons water
- 1/4 teaspoon vanilla
- pinch of salt
- 1 teaspoon fresh lemon or lime juice (optional)
- 1/4 teaspoon ground cardamom or nutmeg (optional)
Gorilla Bread

Preheat the oven to 350 degrees
- 1/2 cup granulated sugar
- 3 teaspoon cinnamon
- 1/2 cup (1 stick) butter
- 1 cup packed brown sugar
- 1 8-ounce package cream cheese
- 2 - 12-ounce cans refrigerated biscuits (10 count)
- 1 1/2 cup coarsely chopped walnuts or pecans
Penne with Roasted Tomatoes, Garlic, and White Beans

Preheat oven to 450. Slice each tomato into 8 wedges and discard the seeds
- 3 large ripe tomatoes (about 2 lbs.)
- 6 large cloves garlic, papery outermost skin removed, but left unpeeled.
- 3 tbs. olive oil
- 1/2 tsp salt, plus more to taste
- Black pepper
- 1 can cannellini or other white bean,
- 1/2 box (8 oz) penne pasta
- 2 tbs. fresh lemon juice
- 1/3 cup fresh basil leaves, cut into ribbons
- 1/4 cup freshly grated Parmesan cheese
Tammy's Chicken Pot Pie

In a 13x9 inch pan mix chicken, broth, soup and vegetables
- Topping:
- 2 cups cooked chicken
- 1 can chicken broth
- 2 cans cream of mushroom or chicken soup(or one of each)
- 1 (16oz.) pkg. frozen vegetables
- 1 cup milk
- 1 cup flour
- 1 stick butter
SALMON WITH DIJON SAUCE

SEASON salmon with salt and pepper
- 4 (6 oz.) salmon fillets
- Salt and pepper to taste
- 1/3 cup FRENCH'S® Dijon Mustard
- 3 tbsp. olive oil
- 3 tbsp. lemon juice
- 1 tsp. minced garlic
Southwestern Calico Corn

Heat oil in a large nonstick skillet over medium-high heat
- 1 tablespoon canola oil
- 1 poblano pepper, diced
- 1 small red bell pepper, diced
- 2 cups fresh corn kernels
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1 14-ounce can hominy, rinsed
