- 8 potatoes, unpeeled
- 1/2 cup butter, melted
- 2 Tbsp Parmesan, freshly grated

Caprese Tart

- Pie dough (store bought, about 6 large pieces of dough)

- 1 1/2 pounds fresh mozzarella, cut into 1/3-inch slices

Banana Mango Smoothie

Arrange mango cubes in a single layer on a baking sheet, freeze until firm (about 1 hr)
- 1 cup cubed peeled ripe mango
- 3/4 cup sliced ripe banana (about 1 medium)
- 2/3 cup fat free milk
- 1 Tbsp nonfat dry milk (optional)
- 1 tsp honey
- 1/4 tsp vanilla extract
Spinach and Hot Ham Fake-Baked Pasta with a Crispy Top

- 1 pound cavatappi, corkscrew pasta with lines or, macaroni with line in any short cut
- Salt
- 3 tablespoons extra-virgin olive, divided
- 2 tablespoons butter
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- Black pepper
- 3 tablespoons all-purpose flour
- 1 1/2 cups whole or 2 percent milk
- 1/2 pound sliced capocollo, hot ham, halve then slice into thin ribbons
- 1 box frozen chopped spinach, defrosted and excess liquid squeezed out
- 1 cup grated Parmigiano-Reggiano, a few large handfuls, divided
- 1/2 teaspoon nutmeg, ground or freshly grated, eyeball it
- 1/4 teaspoon ground cayenne pepper, a couple pinches
- 1 pound ball fresh mozzarella -- buy a piece wrapped, not packed in water, then cut into 1/2-inch cubes
- 1 cup plain or Italian bread crumbs
- A generous handful of flat leaf parsley, finely chopped
Shrimp Cakes with Grain Mustard Remoulade

Heat a griddle or nonstick skillet with cooking spray and set over medium-high heat to preheat
- SHRIMP CAKES:
- Cooking spray
- Cooked shrimp, about 12 ounces, chopped
- 2 to 3 tablespoons mayonnaise
- 1 large egg, lightly beaten
- 2 tablespoons seasoned dry bread crumbs
- 1 tablespoon fresh chives, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- MUSTARD REMOULADE:
- 1/4 cup mayonnaise
- 1 tablespoon grain mustard
Cinnamon Raisin Bread

1. In large bowl, whisk the egg, buttermilk and butter
- 1 large egg, beaten
- 1 cup buttermilk
- 1/4 cup butter, melted
- 2 1/2 cups flour
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup white sugar
- 1/2 cup packed dark brown sugar
- 1 Tbsp cinnamon
- 1 cup raisins

- 1 jar marshmallow fluff
- 1 small tub cream cheese
- Fresh fruit of choice-apples, strawberries etc.
Pepperoni Pizza Puffs

- 3/4 cup flour
- 3/4 teaspoon baking powder
- 3/4 cup whole milk
- 1 egg, lightly beaten
- 4 ounces mozzarella cheese, shredded (about 1 cup)
- 4 ounces pepperoni, cut into small cubes (about 1 cup)
- 1/2 cup store-bought pizza sauce
- 2 tablespoons finely chopped fresh basil
- 1 red bell pepper, sliced
Pina Colada Ice-Cream Pie

1.Gently stir cream of coconut, pineapple and rum into ice cream in large bowl
- 1/2 cup canned cream of coconut (not coconut milk)
- 1 can (8 ounces) crushed pineapple in juice, drained
- 2 tablespoons light rum, if desired
- 5 cups vanilla ice cream, softened
- 1 package (9 ounces) ready-to-use graham cracker pie crust (10 inches in diameter)
